    Why is my pan grilled chicken recipe the best?

    • This method is an easy way to cook grilled chicken without a grill at home.
    • It’s loaded with flavor thanks to a light (and fast) marinade. 
    • Use grilled chicken in dishes like homemade pizza, salads, and tacos.

    Ingredients

    Here’s what you need to make this quick and easy chicken recipe.

    Grill pan chicken breast marinade

    • Boneless skinless chicken breasts
    • Olive oil
    • Lemon juice (substitute lime juice)
    • Cilantro
    • Salt and pepper
    • Garlic powder
    • Crushed red pepper flakes

    To grill on the stove and finish

    • Avocado oil (optional, but preferable for grilling perfectly golden brown chicken because it has a high heat tolerance and won’t burn easily like it’s substitute olive oil)
    • Cilantro, fresh chopped

    How to grill chicken on stove top

    Now I’ll walk you through grilling chicken on a grill pan on the stove.

    1. Prep chicken. Pat chicken breast dry with paper towels. Pound chicken breasts flat and thin with a meat tenderizer, so they cook evenly in the grill pan. To do this, you may need to butterfly the chicken (cut it in half horizontally) so it’s about 1-2” thick. 
    2. Make marinade. Add all grill pan chicken breast marinade ingredients (other than the chicken) to a large bowl. Whisk to combine. Add the chicken breast to the marinade and let sit for 15 minutes, or longer (a few hours) in the fridge. 
    3. Grill chicken breast on stove top. Add a grill pan to the stove on medium-high heat. Brush grates with a little avocado oil if desired. Once it’s hot, add chicken breast and let it grill on the pan on the stove for about 5 minutes. Don’t move it during this time. Once grill marks form, flip the chicken breast with tongs and grill the other side for about 5 minutes or as long as needed until an internal meat thermometer confirms when the chicken pieces reach an internal temperature of 165 degrees F. 
    4. Rest chicken in grill pan or on a cutting board for 5-10 minutes to let the juices settle. Sprinkle with fresh cilantro if desired and enjoy.

    FAQs

    Do you need to marinade pan grilled chicken breast?

    Technically, no. If you don’t have at least 15 minutes to marinade your chicken before indoor grilling it, you can just season it with dry spices, salt and pepper, and then apply the olive oil to the grill pan and sear it when hot.

    What grill pan do you use?

    In this particular demonstration on how to make grilled chicken on stove, I’m using a versatile grilling pan that’s a large grill pan on one side (with grooves) and a flat griddle pan on the other side. So I can use it to make chicken breast one night, then whip together apple pancakes the next morning. You can shop my grill pan on Amazon.

    What if you don’t have a grill pan?

    What do you serve with grilled chicken?

    Serve ​​​​grilled chicken breast on stove with a tasty, healthy side dish like this air fryer acorn squash in the Fall or peach salad in the Summer. Either way, serve it with my jalapeno ranch dressing for a delicious meal.

    Meat thermometer recommendations

    Every home chef needs a reliable meat thermometer to cook food perfectly. 

    On Sip Bite Go, you’ll often see me using:

    1. Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
    2. ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill. 

    It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature. 

    How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.

    While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!

    Do you need to use avocado oil?
    Avocado oil (for the grilling step) is optional, but preferable because it has a high heat tolerance and won’t burn easily like it’s substitute olive oil. The goal is perfectly golden brown chicken. But this recipe cooks quickly, so olive oil would be just fine.
