    Sous vide egg bites at home are one of the ways I can eat a tasty breakfast on any busy morning. This is basically a recipe to make Starbucks copycat sous vide egg bites at home.

    My biggest tip is to meal prep them for a week at a time and reheat them in the morning or for lunch. And for those of you who always ask me which sous vide recipes are good for guests? This is a great sous vide brunch recipe.

    In this post I’ll walk you through making egg bites sous vide style. We’ll go step by step, from how to scramble and season the eggs, to my recommendations for egg bite fillings – in this recipe I use bacon, cheese and caramelized onions.

    Then you’ll see how to get creamy, soft, souffle-like Starbucks copycat egg bites with minimal effort. Let’s get cooking.

    What are egg bites sous vide style?

    If you’ve made them right, sous vide egg bites are like crustless mini quiches, just better! They are really light, fluffy and creamy. Plus, you can add in any toppings you’d like. They caught on in popularity when Starbucks egg bites were introduced, and now everyone is making copycat egg bites at home. 

    You can make Starbucks sous vide egg bites at home?

    Yes! And it is really easy to make them. 

    What equipment do you need to make sous vide egg bites?

    In addition to a sous vide machine, and a bucket to hold the water egg bites cook in, you’ll need 4 oz mason jars as the vessel to hold the eggs in a sous vide bath.

    For this post, I used an Anova sous vide machine. If you’re new to this cooking, you can also check out machines like the Joule, or Instant Pot Slim (see more on the new instant pot sous vide machines).

    The small mason jars will come in handy for other sous vide recipes – like desserts including sous vide cheesecake.

    If you don’t have mason jars and want to make an egg recipe right now, then make these soft boiled sous vide eggs.

    Ingredients for egg bites sous vide style

    The base of the Sip Bite Go egg bites recipe includes eggs, milk, fontina cheese, and salt and pepper. Additional ingredients and toppings for the recipe featured at the bottom of this post include caramelized red onion, bacon, and a sprinkle of cilantro.

    How to sous vide egg bites (Starbucks copycat recipe)

    Step 1. Set your sous vide bath to 172ºF.

    While water is coming up to temperature, prepare caramelized onions and bacon. Or whatever other toppings / ingredients you want for your sous vide breakfast. 

    Steps 2-3 are optional – they will guide you on how to prep a couple of filling suggestions for egg bites (onions and bacon). You can mix in any ingredients you’d like.

    Step 2. Caramelize onions. Add sliced red onions and olive oil to a pan on the stove on medium heat. Stir regularly (so onions don’t burn) for 10 minutes. Turn heat to medium-low, add ½ tbsp more of olive oil, and continue stirring regularly until onions are completely soft and brown, about 5-10 minutes more. If onions begin to burn at any time, add 1-2 tbsp of water. Once done, remove from heat.

    Step 3. Cook bacon on medium heat in a frying pan on the stove for 5-8 minutes on each side, until browned. Once done, remove from heat and lay on paper towel. Dice bacon for the egg bites.

    Alternatively, you can sous vide overnight bacon. It’s so delicious.

    Whisk the egg base ingredients together

    Step 4. In a large bowl, whisk together eggs. 

    Stir in milk, fontina cheese, salt and pepper.

    Transfer the egg mixture to a measuring cup with a spout.

    Step 5. Add egg bites to 4 oz mason jars. First, spray mason jars with olive oil cooking spray. Then evenly distribute cheese amongst the mason jars. Fill mason jars â…” of the way with egg mixture. Add in cooked bacon and caramelized onions. Seal jars tight.

    Step 6. The egg bites cook at 172ºF for 60 minutes.

    Once done, remove from heat. Egg bites should be set and not runny. Obviously, the jar will be hot.

    To eat immediately, run a knife along the outside of the egg bites and pop them out of the mason jars. To store them for later, shock them in an ice bath, then refrigerate for up to one week.

    How do you know if egg bites are done right? 

    Eggs should be fluffy when removed from the jar you used to cook them.  If they are at all runny, they are not fully cooked. However, if you’ve followed the directions and cooked them for 60 minutes at the recommended egg bite time and temperature, you won’t have that problem. 

    How do you meal prep egg bites? 

    We like to make a weeks worth of sous vide egg bites at a time to have them ready-to-go for busy mornings. We also love making these for overnight guests. 

    To meal prep egg bites, cook them as directed then let them cool before storing them in the fridge.

    How to refrigerate sous vide egg bites

    Egg bites get hot enough to be pasteurized during cooking, so they should last at least 1 week in the fridge in the mason jar they are cooked in. That means you can make a big batch over the weekend and enjoy these every day of the week– with different toppings, of course!

    How do you reheat egg bites?

    Reheat in the microwave for 15-30 seconds when you’re ready to eat.

    What if egg bites are hard to remove from the jars after cooking? 

    If your egg bites don’t pop right out of the jar after cooking, don’t panic! Run a knife along the inside of the jar and try turning them out again. Next time you make these, lightly spray them with a cooking spray before cooking. Prepping with a cooking spray has an added bonus too: it makes it easy to clean your egg bite jars after cooking.

    Easy toppings for sous vide egg bites

    Egg bites taste scrumptious straight from the jar, but I like to mix up the toppings as well! Sometimes I’ll serve egg bites with a little hot sauce or salsa.

    Other days, I’ll grate some hard cheese over the top: gruyere and cheddar are especially good. You can also place a slice of cheese over while they’re still hot, and the melted goodness will blend wonderfully with the egg flavors.

    You could make a little sous vide style egg bites buffet. In fact, I love sous viding for a crowd, particularly for breakfast. Here are some ways to add flavor to egg bites:

    • Soft cheese: Feta, Brie
    • Fresh herbs: basil, cilantro (love to play with flavors from my kitchen herb garden)
    • Diced green onion
    • Sauteed mushrooms with thyme
    • Caramelized red onion
    • Roasted red pepper
    • Sous vide bacon
    • Roasted cherry tomatoes
    • Avocado

    • Experiment with any cheese you love! Egg bites taste great with a range of cheeses, from hard cheese like cheddar to soft cheeses like Feta and Brie.

We'll go step by step, from how to scramble and season the eggs, to my recommendations for egg bite fillings. Anytime you want a yummy start to the day, with minimal work, sous vide egg bites are your go-to. They’re easy to make a week at a time, and take just 15-30 seconds to reheat in the microwave.

    Ingredients

    • 1 medium red onion sliced thin
    • 1.5 tbsp olive oil divided
    • 6 pieces bacon
    • 5 eggs
    • 1/4 cup milk 2%
    • 1/4 cup fontina cheese shredded
    • 1/4 tsp salt
    • 1/4 tsp pepper
    • olive oil cooking spray
    • 1 tbsp cilantro chopped (optional)

    Instructions
