Here’s what you need to make pancakes on the griddle with homemade batter.

- 1 ⅓ cup AP flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 ½ tsp cinnamon
- 1 ½ cup milk
- 1 egg, beaten
- 2 tbsp butter, melted and cooled
- 1 tsp vanilla extract
- 2 tbsp butter, set aside for griddle

- Preheat the Traeger Flatrock or any griddle to medium heat and prepare the pancake batter.
- Griddle pancakes on heated flat top for 2 – 3 minutes per side.
- Finish griddled pancakes by topping them with syrup, whipped cream and fresh berries or something fancy like this blueberry compote.

Detailed pancake batter recipe steps…
- Add all dry ingredients (flour, sugar, salt, baking powder, baking soda) in a large mixing bowl and stir to combine thoroughly.
- Separately combine all the wet ingredients (milk, egg, butter, vanilla extract) and stir to combine.
- Make a well in the center of your dry ingredients and then add wet ingredients into the dry. Stir to combine.
- Set aside for 15 minutes so the ingredients activate with each other.
How to griddle pancakes…
- Preheat your Traeger Flatrock, or Blackstone Grill or whatever outdoor griddle you’re using to medium heat and add 2 tbsp butter to the griddle. Spread the butter around as it melts, so your entire cooking surface has a buttery coat.
- Scoop or pour pancake batter onto the buttered cooking surface and cook for 2 – 3 minutes or until they start to brown to your liking. You’ll know when to flip the pancakes once the air bubbles start popping through to the surface.
- Flip and continue to cook the pancake until done. About ~ 2 minutes
- Plate and cover with syrup, whipped cream, and some berries of your choice.
- Enjoy!

FAQs
I set my Traeger Flatrock griddle to the medium setting. Surface temp is ~350 – 375 degrees F.
My rule is to not mess with a pancake after you put the batter onto the griddle. Wait until you start seeing bubbles start to pop through to the surface. Wait for those bubbles to pop before you flip the pancake. Should be about 2 – 3 minutes before you flip it.
You should use butter when griddling pancakes. When the batter hits the hot butter, it creates a nice pancake browning that everyone enjoys.
