    How to smoke wings

Here’s what you need to do to prepare and smoke the wings to perfection.

Dry rub seasoned chicken wings in a bag

Step 1. Season wings with the smoked wings rub. Pat wings dry with paper towels and add them to a large bowl or a large gallon size plastic bag.

And dry rub spices to the bag (garlic powder, baking powder, cayenne pepper, and salt). Seal the plastic bag closed and shake the chicken wings and seasoning, making sure all ingredients are distributed to coat the wings. Refrigerate seasoned wings for at least 30 minutes so they absorb all the flavors of the seasoning.

This recipe is surprising, because you get crispy smoked buffalo wings without using very high heat.

Step 2. Prep the smoker. Preheat the smoker to 180°F (preheating the Trager pellet grill takes about 15 – 20 minutes to reach the smoked wings temperature).

Step 3. Start smoking chicken wings on low. When it comes to how long to smoke wings, there are two different settings you’ll use. First, place chicken wings in the smoker, on the grill grates for 20 minutes at 180°F. (I don’t find it necessary to use any olive oil or cooking spray)

Step 4. Finishing smoking wings at a higher temperature. Then flip the chicken wings with tongs, turn up the Traeger smoker temperature to 350°F, and cook for another 50 minutes or until the internal temperature of the largest chicken wing reaches 165°F. This is a good time to make the wings sauce.

Step 5. Make buffalo sauce while smoking chicken wings. Add Frank’s buffalo wings sauce and melted butter to a medium sized bowl. Whisk to combine. Add fresh chopped parsley to the sauce and combine for a final time. Set aside until the wings are ready.

Step 6. Coat smoked wings in buffalo sauce. Once wings finish cooking, add them to a large bowl. Add buffalo sauce and toss them until coated evenly. Transfer to a platter, drizzle on any buffalo sauce from the bowl, and serve immediately with your favorite condiments.

    FAQs for smoking chicken wings

What flavor pellets do you use to smoke wings?

Cherry wood pellets are a great choice to get a light and flavorful wood fired smoky flavor. Though often my husband and I use the Traeger blend from Costco and the results are always good!

What can you season smoked wings with?

Other ingredients to experiment with in the smoked wings dry rub include brown sugar, bbq salt, garlic salt, or even just simple salt and pepper. You can also use bbq sauce to finish them at the end, instead of buffalo sauce.

    Can you overcook smoked chicken?

Overcooking chicken in the smoker is one of the easiest ways to ruin your wings, so keep a close eye on your chicken when they’re in the last half hour and use a meat thermometer towards the end because how long to smoke chicken wings varies depending on the size of the chicken wings.

Why are my smoked chicken wings rubbery?

Rubbery chicken is typically caused by not getting the smoker hot enough, so you’ll want to double check that your heat settings were right during cook time. If you follow my time and temp recommendations, you should be getting some delicious smoked chicken with a skin that is almost crisp and not at all rubbery.

Can I smoke a whole chicken in my Traeger?

You can! For an even cook, consider spatchcooking a chicken. You’ll need the specific time and temperature adjusted from this smoked chicken wings recipe.

What can I serve with smoked chicken wings?

Once you get the hang of how to smoke chicken wings, it’s time to work on your “sides game”. Serve your smoked chicken wings with jalapeno ranch dressing, blue cheese coleslaw or a pasta salad.

    Meat thermometer recommendations

Every home chef needs a reliable meat thermometer to cook food perfectly.

On Sip Bite Go, you’ll often see me using:

    1. Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
    2. ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill.

It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature.

How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.

While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!

How to serve wings for a BBQ party

Wings are an easy Traeger recipe to serve as an appetizer on a summer BBQ menu. Here’s how we serve them…

    Are you a foodie, too?

Hey home chefs, these Traeger smoked chicken wings are just the tip of the iceberg when it comes to tasty hot wings.

Even though I live in Texas, we don’t have any good smoked wings near me…

So I’m so happy to have this smoked buffalo wings recipe to make them at home.

    Hey, I’m Jenna Passaro.

I develop easy recipes that can transform your kitchen into a restaurant – and you into a true home chef.

    Where to start?

Learn the secrets to smoking tasty Traeger recipes and making pizza at home. And cook amazing tri tip steak dinners.

Or, fall in love with something new to cook with your air fryer, pellet smoker, BBQ grill, sous vide cooker, and more…

You’ll notice, I kind of geek out over new cooking trends and tools!

    Instagram me @sipbitego & chef hubs @handmodelpatrick

My story. Growing up, I didn’t learn to cook.

(I was actually banned from cooking for years)

And then in my 20’s I didn’t have to cook because my job as an event planner involved a lot of travel and it was easier to eat out. At the time, I was 100% positive that restaurant food would always taste better than cooking at home, and there was nothing I could do about it.

Until I fell in love with a chef. He would come over and cook me delicious meals right in my own kitchen. My mind was blown.

Since then, I’ve been on a mission to figure out easy ways to make restaurant style food at home and share it here on Sip Bite Go.

Love to eat out and travel? I can totally relate. See my guide on where to eat in Portland, OR.

Never in a million years did I imagine I’d ditch the 9-5 lifestyle in my late 20’s, move across the country on a whim, start a new life, start a food blog, and write a book.

    But here I am!
