- Preheat the smoker and season pork chops.
- Smoke pork chops at 225 degrees F for about 90 minutes.
- Remove the pork chops from the smoker when almost done, and rest to desired temperature (145 degrees F for medium doneness).
- Enjoy.
Detailed recipe steps
- Preheat Traeger Grills or Pitt Boss or whatever pellet grill you’re using to 225 degrees F.
- Season pork chops. First, pat them dry with paper towels. Then drizzle olive oil on pork chops, rubbing it all over. Then sprinkle all over with BBQ rub, including the edges. Massage in the spices.
- Smoke bone in pork chops. Add them directly to the grill grates and close the lid of the pellet grill. Hit the “super smoke” feature button on the Traeger if that’s your preference for extra smokey flavor.
- Remove smoked chops. In the Sip Bite Go demonstration, the bone in pork chops were removed from the Traeger at 140 degrees F, so they could be covered in foil and come up to 145 degrees F (medium) while resting. - Finish the recipe by resting pork chops for about 10 minutes. Serve with your favorite condiments.
FAQs
I like to use a sweet wood chip flavor like Traeger Apple Pellets most of the time. But if I’m in the mood for a more smoky flavor, Traeger Hickory Pellets will do the trick.
Depending on the size of your pork chops, it should take anywhere from 70 – 90 minutes to smoke bone in pork chops. Since you’re not using high heat, they smoke low and slow to perfection. As usual, I always recommend using an internal read thermometer to keep track of your desired internal temperature.
To smoke pork chops, first start by seasoning the pork chops with some olive oil as a binder topped with a dry rub of your choice. Preheat your smoker to 225 degrees F and smoke until you reach an internal temperature of 140 – 145 degrees F. Remove the bone in pork chops from your pellet smoker and let them rest for 10 minutes prior to slicing. Enjoy!
Pork chops are considered done once they reach an internal temperature of 145 degrees F. If you plan to rest them under foil after cooking, then remove them from your smoker, grill or oven once they reach 140 degrees F internal temperature. The pork chops will rise in temperature after 10 minutes of resting covered with foil.
You can serve a lot of side dishes with smoked pork chops. I like to go with something that is comfort-food based. Or something sweet like applesauce or smoked peaches. For a Traeger recipe to serve on the side, try these smoked mashed potatoes or smoked mac and cheese, or smoked corn on the cob. I have recipes for each!
I recommend smoking pork chops at 225 degrees F. I found this to be a great temperature that provides a ton of smoke flavor into the bone in pork chops. Additionally on some Traeger pellet grills, you can use the super smoke feature which will provide even more smoke flavor!

Meat thermometer recommendations
Every home chef needs a reliable meat thermometer to cook food perfectly.
On Sip Bite Go, you’ll often see me using:

- ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill.
It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature.
How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.
While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
