Quick look at smoking pork chops

    1. Preheat the smoker and season pork chops.
    2. Smoke pork chops at 225 degrees F for about 90 minutes.
    3. Remove the pork chops from the smoker when almost done, and rest to desired temperature (145 degrees F for medium doneness).
    4. Enjoy.

    Detailed recipe steps

    1. Preheat Traeger Grills or Pitt Boss or whatever pellet grill you’re using to 225 degrees F.
    2. Season pork chops. First, pat them dry with paper towels. Then drizzle olive oil on pork chops, rubbing it all over. Then sprinkle all over with BBQ rub, including the edges. Massage in the spices.
    3. Smoke bone in pork chops. Add them directly to the grill grates and close the lid of the pellet grill. Hit the “super smoke” feature button on the Traeger if that’s your preference for extra smokey flavor.
    4. Remove smoked chops. In the Sip Bite Go demonstration, the bone in pork chops were removed from the Traeger at 140 degrees F, so they could be covered in foil and come up to 145 degrees F (medium) while resting. Use an internal read thermometer to know when they’re done. (Smoking bone in pork chops takes about 70-90 minutes in my experience – see full recipe notes at bottom of this page for more…)
    5. Finish the recipe by resting pork chops for about 10 minutes. Serve with your favorite condiments.

    FAQs

Which flavored pellets do you use for smoking pork chops?

I like to use a sweet wood chip flavor like Traeger Apple Pellets most of the time. But if I’m in the mood for a more smoky flavor, Traeger Hickory Pellets will do the trick.

How long does it take to smoke pork chops at 225 degrees?

Depending on the size of your pork chops, it should take anywhere from 70 – 90 minutes to smoke bone in pork chops. Since you’re not using high heat, they smoke low and slow to perfection. As usual, I always recommend using an internal read thermometer to keep track of your desired internal temperature.

How to smoke bone in pork chops?

To smoke pork chops, first start by seasoning the pork chops with some olive oil as a binder topped with a dry rub of your choice. Preheat your smoker to 225 degrees F and smoke until you reach an internal temperature of 140 – 145 degrees F. Remove the bone in pork chops from your pellet smoker and let them rest for 10 minutes prior to slicing. Enjoy!

At what temp are pork chops done?

Pork chops are considered done once they reach an internal temperature of 145 degrees F. If you plan to rest them under foil after cooking, then remove them from your smoker, grill or oven once they reach 140 degrees F internal temperature. The pork chops will rise in temperature after 10 minutes of resting covered with foil.

What to serve with smoked pork chops?

You can serve a lot of side dishes with smoked pork chops. I like to go with something that is comfort-food based. Or something sweet like applesauce or smoked peaches. For a Traeger recipe to serve on the side, try these smoked mashed potatoes or smoked mac and cheese, or smoked corn on the cob. I have recipes for each! Smoking pork chops with smoked peaches on the Traeger

What temperature do you smoke pork chops?

I recommend smoking pork chops at 225 degrees F. I found this to be a great temperature that provides a ton of smoke flavor into the bone in pork chops. Additionally on some Traeger pellet grills, you can use the super smoke feature which will provide even more smoke flavor!

    Meat thermometer recommendations

Every home chef needs a reliable meat thermometer to cook food perfectly.

On Sip Bite Go, you’ll often see me using:

    1. Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
    2. ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill.

It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature.

How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.

While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!

    Are you a foodie, too?

Hey home chefs, hope that answers all your questions about making perfect medium done pork chops on the smoker.

Another tasty pork smoker recipe to try is this smoked bone-in pork shoulder with pineapple. It’s unbelievably tasty!

    Equipment

    • Traeger Apple Pellets
    • Traeger Pellet Grill Ironwood 650

    Ingredients

    • 4 pork chops (bone in or boneless, center cut, 1 inch or more thick cut pork chops)
    • 1 tbsp olive oil
    • 1.5 tbsp bbq rub or any pork seasoning, or use a little kosher salt and black pepper
    • ½ cup applesauce optional, for serving
    • ½ cup BBQ sauce optional, for serving
    • ½ cup jalapeno ranch dressing Sip Bite Go recipe, optional, for serving

    Instructions

    • Preheat Traeger Grills or Pitt Boss or whatever pellet grill you’re using to 225 degrees F.
    • Season pork chops. First, pat them dry with paper towels. Then drizzle olive oil on pork chops, rubbing it all over. Then sprinkle all over with BBQ rub, including the edges. Massage in the spices.

    • Remove smoked bone-in pork chops when done to your desired temperature (or a few degrees before reaching the done temp).
In the Sip Bite Go demonstration, the bone in pork chops were removed from the Traeger at 140 degrees F, so they could be covered in foil and come up to 145 degrees F (medium) while resting. Use an internal read thermometer to know when they’re done.
Exactly how long to smoke bone in pork chops depends on how thick they are and how hot the grill remains during the smoke time (whether or not you’re opening the grill and heat is escaping).
Smoking bone in pork chops takes about 70-90 minutes in my experience, but exactly how long to smoke bone in pork chops will depend on how thick they are and how many times you open the grill, allowing heat to escape.
    • Finish smoked bone-in pork chops by resting them for about 10 minutes. Serve with your favorite condiments.

    Hey, I’m Jenna Passaro.

I develop easy recipes that can transform your kitchen into a restaurant – and you into a true home chef.

    Where to start?

Learn the secrets to smoking tasty Traeger recipes and making pizza at home. And cook amazing tri tip steak dinners.

Or, fall in love with something new to cook with your air fryer, pellet smoker, BBQ grill, sous vide cooker, and more…

You’ll notice, I kind of geek out over new cooking trends and tools!

    Instagram me @sipbitego & chef hubs @handmodelpatrick

My story. Growing up, I didn’t learn to cook.

(I was actually banned from cooking for years)

And then in my 20’s I didn’t have to cook because my job as an event planner involved a lot of travel and it was easier to eat out. At the time, I was 100% positive that restaurant food would always taste better than cooking at home, and there was nothing I could do about it.

Until I fell in love with a chef. He would come over and cook me delicious meals right in my own kitchen. My mind was blown.

Since then, I’ve been on a mission to figure out easy ways to make restaurant style food at home and share it here on Sip Bite Go.

Love to eat out and travel? I can totally relate. See my guide on where to eat in Portland, OR.

Never in a million years did I imagine I’d ditch the 9-5 lifestyle in my late 20’s, move across the country on a whim, start a new life, start a food blog, and write a book.

    But here I am!
