Here’s what you need to make my super simple pellet smoker corn on the cob.
For the corn
You’ll need fresh ears of corn. Plan for 1-2 corn on the cobs per person. To prepare them, peel back the husks and discard them so you have fully shucked corn. You can smoke corn in the husk – but you’ll want to peel them back to apply the butter sauce as they cook. So I say: skip the husk!
For the butter sauce
- Butter
- Cilantro (fresh chopped)
- Garlic powder
- Salt and pepper
- Cotija cheese (optional)
How to make smoke corn on the cob
Fire up the smoker and let’s cook…
- Preheat the smoker to 225 degrees F.
- In a small bowl, mix together butter with fresh cilantro, garlic powder, salt and pepper. Brush half of the butter mixture all over the corn.
- Once the pellet grill is heated to 225°F, add butter seasoned corn on the cob directly on the smoker grates. Close the lid and smoke corn on the cob for 25 minutes.
- Flip corn, brush the remaining butter seasoning on top, and smoke for an additional 20 minutes or until corn is completely cooked and easy to pierce with a fork. The total cook time for smoked corn is about 45 minutes.
- Remove smoked corn from the pellet grill, top with cotija cheese, let it cool until it’s safe to eat, and enjoy.

No husk is needed to smoke corn on the cob. So before making the recipe, peel back the corn husks and discard them. And then remove the silks by using a brush or your fingers to separate them from the cob.
No, soaking the corn ahead of time is unnecessary. You don’t have to steam any type of ear of corn before smoking it on the Traeger grill. It cooks the corn evenly and thoroughly, even without being wrapped in foil or left in the corn husks during smoking.
In this demo, I used the Traeger blend wood chip pellets. Apple, cherry, or hickory wood chips are also a great choice.

Every home chef needs a reliable meat thermometer to cook food perfectly.

How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.
While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
