Here’s what you need to make papas con chorizo with a sunny side egg on top.
- 2 LB yukon gold potatoes, diced
- 2 tbsp avocado oil
- 9 oz pork chorizo (without casing, I used Cacique pork chorizo)
- ⅓ cup white onion, diced
- ½ tsp garlic salt
- ¼ tsp oregano, dried
- 2 tbsp butter, unsalted
For the egg
- 1 tbsp butter salted
- 4 eggs
- ½ tsp cilantro, fresh chopped
Serving ideas
- Corn or flour tortillas or chips
- Salsa
- Sour cream
- Avocado
- Cheddar cheese

Detailed recipe steps
- Boil diced potatoes in a large pot filled with water and ½ tsp salt for about 5-8 minutes, until they are easily pierced with a fork, but before they turn mushy.
- Heat a large cast iron skillet on medium heat. Add oil and when it becomes shiny, and hot, add chorizo. Stir 5-8 minutes until chorizo is almost completely cooked.
- Add onions, potatoes, garlic salt, oregano, and butter to the chorizo mixture. Stir regularly until chorizo is done cooking and all ingredients are integrated and potatoes are fully cooked.
- Make the sunny side up eggs, one at a time, in a skillet on low heat. Add some butter to the pan. When it melts, crack an egg in and gently drop it on top. Let it sizzle in place so the bottom fries up a bit and the top stays gooey. Cook until done to your liking, the one in the Sip Bite Go video recipe demonstration cooked in 3 – 4 minutes. Carefully remove it by sliding a spatula beneath, and lifting up the egg, without disturbing the oozy egg yolk on top.
- Serve by adding sunny side up eggs on top of papas con chorizo and sprinkle with fresh chopped cilantro. Serve with your favorite Mexican food toppings like sour cream, cheddar cheese, and salsa.
