Boil diced potatoes in a large pot filled with water and ½ tsp salt for about 5-8 minutes, until they are easily pierced with a fork, but before they turn mushy.
Heat a large cast iron skillet on medium heat. Add oil and when it becomes shiny, and hot, add chorizo. Stir 5-8 minutes until chorizo is almost completely cooked.
Add onions, potatoes, garlic salt, and butter to the chorizo mixture. Stir regularly until chorizo is done cooking and all ingredients are integrated and potatoes are fully cooked.
Make the sunny side up eggs, one at a time, in a skillet on low heat. Add some butter to the pan. When it melts, crack an egg in and gently drop it on top.
