Ingredients
Here’s what you need to roast Brussels sprouts…
Oven roast Brussels sprouts
- 12 oz Brussels sprouts, halved and outer leaf removed
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp pepper
- ½ lemon, juice fresh squeezed
Oven baked bacon
- 1 LB bacon (you’ll only need a few strips but I usually just cook the whole pack)
To finish roasted Brussels sprouts dish
- 2 tsp balsamic glaze
- 2 tbsp parmesan cheese

How to cook oven roasted Brussels sprouts
- Preheat the oven to 425 degrees F.
- Set out a medium or large parchment paper lined rimmed tray.
- In a large bowl, toss together Brussels sprouts, olive oil, salt, pepper, and lemon juice.
- Spread out Brussels sprouts on a parchment paper lined tray in an even later.
- Add Brussels sprouts to the oven and cook at 425 degrees F for about 25-35 minutes, flipping regularly as you check on them about every 10-15 minutes – until crisp to your liking.
- Get started on the bacon (steps below). While Brussels sprouts cook is a great time to cook the bacon in the oven at the same time. The bacon will be done cooking a bit faster.

How to cook bacon in the oven
- Set out a large parchment paper lined rimmed tray.
- Lay bacon strips on a tray in a flat layer (you’ll only need a few strips to add to the Brussels sprouts dish, but I usually just cook the whole pack).
- Bake bacon at 425 degrees F for about 15-20 minutes, flipping every 7-10 minutes, until crisp to your liking.
- To let bacon rest after cooking, I usually add it to a plate or cutting board lined with paper towel.
- Diced desired amount of bacon for Brussels sprouts plating.
Plating the dish
- Add roasted Brussels sprouts to a serving plate.
- Top with bacon, a drizzle of balsamic glaze, and parmesan cheese.

FAQ
I don’t find it necessary to add the step of boiling brussels sprouts then roasting them. In my opinion, that causes them to steam a bit more and get mushy. Instead, I like how the crispness of this side dish turns out and find them to be evenly cooked using this method.

Meat thermometer recommendations
Every home chef needs a reliable meat thermometer to cook food perfectly.
On Sip Bite Go, you’ll often see me using:
- Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
- ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill.
It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature.
How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever before cooking them.
While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
Why I wrote this recipe
I’ve been cooking a lot of smoked turkey and smoked turkey breast as I get ready for the holiday season and Thanksgiving cooking…
And so adding some smoked mashed potatoes and brussels sprouts into the recipe testing was meant to happen…
Anyways, crispy Brussels sprouts put me back to a time when they were new and hot at restaurants. Circa 2010 or so.
The ones in my recipe aren’t fried – they’re roasted – but they’re going to hit all those tasty notes with the sweet balsamic glaze and salty Parmesan cheese.
If you hadn’t noticed in my stories and posts on Instagram, I’ve decided to skip right over Halloween and I’m in full blown Thanksgiving dinner and holiday meal mode.
I love that the bacon can cook at the same time as the Brussels sprouts and that this dish is pretty easy to put together.
