When you are smoking just fresh brussel sprouts, it will take you only 90 minutes. When adding smoked bacon, plan on an additional 20 minutes because you will want to smoke the bacon first.

- Smoke bacon at 300 degrees F for 20 minutes.
- Remove the brussels sprouts stem and cut in half.
- Add cut brussels sprouts to a large cast iron pan and add all seasonings to combine.
- Smoke brussels sprouts at 225 degrees F for 1 hour & 15 minutes
- Increase smoker temperature to 425 degrees F and cook for another 10 – 15 minutes.
- Remove cooked brussels sprouts and top with balsamic glaze & parmesan cheese (optional)

Here’s what you need to make Traeger smoked brussels sprouts side dish.
- 8 pieces bacon
- 2 LB Brussels sprouts, stem stump cut off and halved with any dirty outer layers removed.
- 3 cloves garlic, minced
- ½ cup onion, diced
- 1 tbsp bbq rub, or any purpose seasoning (in the video demo below, I used Meat Church Texas Sugar BBQ)
- ½ tsp salt, to taste
- 1 tbsp olive oil
To top after smoking Brussels sprouts (optional)
- 1 tbsp balsamic glaze
- 2 tbsp Parmesan cheese, grated or shredded

How to cook smoked brussels sprouts (detailed recipe steps)
Now I’ll walk you through the detailed recipe for smoking brussels sprouts on the Traeger with extra tips…
- Smoke bacon directly on grill grates at 300 degrees F for 20 minutes.
- Remove bacon from the Traeger and dice in large chunks.
- Turn Traeger to 225 degrees F.
- Add halved Brussels sprouts to a 12” cast iron skillet. Add all remaining main ingredients including partially smoked bacon. Toss to combine.
- Add cast iron skillet Brussels sprouts with bacon mixture to the smoker. Hit the super smoke button for extra smoky flavor. You can super smoke on a when you smoke at this low and slow temperature.
- Smoke Brussels sprouts side dish for 1 hour and 15 minutes. Toss to combine and leave in smoker.
- Turn smoker up to 425 degrees F and smoke Brussels sprouts for 10-15 more minutes until done to your liking and easy to pierce with a fork.
- To finish, drizzle with balsamic glaze and sprinkle with Parmesan cheese.
