    Ingredients

    Here’s what you need to make Traeger smoked onion rings wrapped in bacon.

    • Yellow, sweet or walla walla onions
    • Bacon  
    • BBQ sauce 
    • BBQ seasoning (rub)
    • You could also add some brown sugar or sriracha sauce to make them spicy
    • Finish with a sprinkle of cilantro if desired

    How to make smoked bacon wrapped onion rings

    Now I’ll walk you through it…

    1. Slice ends off onions. Remove onion paper skins and discard. Slice onions into about 4 segment “rounds” (see Sip Bite Go photos) of cut onions about 2” thick.  Separate onions in circles, 2-3 layers in each ring (again see photos this is hard to describe!).
    2. Brush BBQ sauce on the onion rings.
    3. Take the raw bacon, and wrap it around each onion ring. I find it easy to stretch the bacon to fit the entire ring, but you can also double up with 2 pieces of bacon for each smoked bacon onion ring. Wrap each onion until the batch is complete. 
    4. Sprinkle with your favorite BBQ rub / seasoning or use a little brown sugar. Store in the fridge up to overnight or smoke immediately. (If you can let them sit 20 minutes or 30 minutes on a baking sheet or rack before smoking, to dry out a bit, that’s ideal).
    5. To smoke bacon onion rings, preheat the Traeger pellet grill to 250 degrees F. Once preheated, place bacon wrapped onion rings on grill grates for 90 minutes, flipping halfway through at the 45 minute mark. When there are 10-15 minutes left of the smoking time, you can brush extra BBQ sauce on top of rings. Once done, remove from the smoker and serve with a sprinkle of cilantro if desired and your favorite dipping sauce.

    Can I make bacon wrapped onion rings in the oven?

    These onion rings are best smoked, but if you don’t have a Traeger smoker you can also cook them up in your oven. Preheat the oven to 375 F, then cook until the bacon is browned and crisp, about 30 minutes. 

    Can I use my favorite seasoning on these onion rings?

    Yes, use whatever bbq seasoning you prefer or try some brown sugar to sweeten them up.

    Meat thermometer recommendations

    Every home chef needs a reliable meat thermometer to cook food perfectly. 

    On Sip Bite Go, you’ll often see me using:

    1. Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
    2. ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill. 

    It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature. 

    How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.

    While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!

    Ingredients

    • You’ll have leftover onions because the small insides are too tiny to wrap bacon (unless you wrap bacon around the entire thing).
