These oven roasted turkey thighs are super delicious and are a must-make for this year’s Thanksgiving dinner or game day meal. If you’re looking for some dark meat turkey and do not want to make an entire bird, this is definitely the way to-to. Let me show you how it’s done!

- 2 LB Turkey thighs (each ~ 1 LB)
- 1.5 tbsp olive oil
- 1 tbsp BBQ / poultry rub

How to make turkey thighs in the oven
Now I’ll walk you through it…

- Dry rub season turkey thighs and add them to a roasting pan.
- Cook turkey thighs in the oven for about 45 minutes at 350 degrees F.
- Broil on high to finish with crispy skin (done at 175 degrees F internal temp).
- Rest and enjoy.
Detailed instructions
- Preheat the oven to 350 degrees F.
- Pat turkey thighs dry with a paper towel and drizzle them with olive oil. Coat all sides.
- Season turkey thighs with your favorite turkey seasoning, all over.
- Place seasoned turkey thighs in a baking dish or onto a rimmed baking sheet, skin side up.
- Bake turkey thighs in the oven for about 35-45 minutes. Roasted turkey thighs are done when the internal temperature reaches 160 – 165 degrees F.
- Preheat the broiler to high.
- Broil roasted turkey thighs on high, until the outside is golden brown and the internal temperature reaches 170 – 175 degrees F. This will only take a few minutes, you want the skin to be crispy.
- Remove baked turkey thighs from the oven and rest for at least 10 minutes before serving.

It will take about 45 minutes – 1 hour to cook 1 lb turkey thighs in the oven at 350 degrees F. With any cooking, I always recommend that you use an internal read thermometer to determine doneness.
You should stick your internal read thermometer into the thickest part of the turkey. In this case, you measure doneness in the thickest part of the turkey thigh without touching the bone!
To do this, I recommend two things…1). Cook the turkey thighs skin side up in the oven. Having the skin of the turkey facing up will expose it to the most heat. 2). Use the oven’s broil feature at the end of the cooking time for 5 minutes to finish. This will greatly help crisp up the skin.
A few things can go with turkey thighs. Roasted brussels sprouts or sautéed veggies and of course smoked mashed potatoes are always a great go-to.
Any poultry seasoning blend will work, however, if you’d like to keep it simple, just some heavy salt and black pepper will be tasty too.

Every home chef needs a reliable meat thermometer to cook food perfectly.

How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever before cooking them.
While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
