Make it the night before brunch, or the morning-of…
- Grease a 9×13 baking dish.
- Cook diced onion and butter for a few minutes.
- Brown pork sausage ~ 5-10 minutes.
- Toss browned sausage with onions and maple syrup… set aside.
- Whisk together eggs, half and half, and salt.
- Add in cooked onions and sausage, toast cubes, and cheddar cheese… stir.
- Transfer to a baking dish and cover with foil.
- Chill 1 hour up to overnight.
- Bake at 350 degrees F – covered in foil – for about 50 minutes.
- Remove foil and finish baking the egg casserole at 325 degrees F for 15-25 minutes or until it is set to your liking.
- Enjoy with fresh chopped herbs or green onion.

Here’s what you need to make it…
- ½ medium onion, diced
- 1 tbsp butter, salted
- 1 LB ground pork sausage, savory or mild
- 2 tbsp maple syrup
- 6 eggs, whisked
- 1.5 cups half and half
- ½ tsp salt
- 6 slices white bread, toasted and cut into 2” cubes
- 2 cups cheddar cheese, sharp, freshly shredded, ~ ⅓ pound
- 1 tbsp green onion, diced, or fresh chopped cilantro

Now I’ll walk you through the detailed recipe with extra tips…
- Use butter to grease a 9×13 baking dish and set it aside.
- Add onion and butter to a large skillet pan on the stove on medium-high heat.
Stir regularly for about 5 minutes, until the onion is translucent – you want it to be just starting to turn brown.
- Push the cooked onion to one edge of the pan. Add pork sausage to the other half of the pan, breaking it up with a spatula so it begins to brown in crumbles.
Regularly stir both the sausage and onions on their own sides of the pan for about 5-10 minutes, until the sausage is browned. In the final minute you can combine the sausage and onions together.
Turn off the heat of the skillet and drain any excess oil from the pan if desired. - Toss cooked onions and pork sausage with maple syrup. Your kitchen will smell so good right now!
- In a large mixing bowl, add the whisked eggs, half and half, and salt. Whisk to combine.
Add in the cooked onions and sausage, toasted bread cubes, and cheddar cheese.
Stir to combine so the toasted bread cubes are covered with all the wet ingredients.
- Transfer the Christmas breakfast casserole mixture into the buttered baking dish.
Cover with foil and chill in the fridge for 1 hour up to overnight.
- When ready to bake, preheat the oven to 350 degrees F.
Bake the casserole – covered in foil – for about 50 minutes.
- Uncover the Christmas breakfast casserole and reduce the oven temperature to 325 degrees F.
Bake the casserole for 15-25 additional minutes or until the egg in the casserole is set to your liking (it shouldn’t be runny, you’ll want slices to come out like a cake).
- To serve, sprinkle with diced green onion or other fresh chopped herbs of your choice immediately.
