Ingredients for cafe-style focaccia breakfast sandwich
This is a great idea for a weekend brunch. This breakfast sandwich on focaccia hits all the tasty notes: oven cooked bacon (which is so easy to make – Iโll show you how), fresh mozzarella cheese, focaccia sandwich rolls, a little hot sauce (optional, but why not?), and parsley.
Swap any condiments or herbs in place of the hot sauce and parsley.
I know, I know. It totally goes against the Italian inspired breakfast theme to add chipotle hot sauce (like I do), but it totally works!

How to make this cafe style breakfast sandwich
Step 1. Cook bacon in the oven at 425 degrees F on a large rimmed baking sheet with parchment paper. Cook bacon for 8 minutes, flip, and continue baking for 5-10 minutes until bacon is cooked to your liking.
Step 2. While the bacon cooks, crack 6 eggs and add them to a bowl.
Whisk eggs, salt, and pepper, together until combined.
Step 3. The eggs come together quickly. Heat a medium-sized nonstick pan on the stove to medium-high and add butter.
When butter melts, add eggs.
Gently use the back of a fork or a plastic spatula to keep the eggs from completely sticking to the bottom of the pan for about 30 seconds. Once the eggs start to scramble, run a plastic spatula below them and flip them.
Continue moving the eggs around and flipping the eggs in the pan for about 30 seconds.
Once eggs look almost completely set, remove the pan from the hot burner so the eggs stop cooking.
Step 4. Add mozzarella to the top of the hot eggs to melt while you assemble the focaccia breakfast sandwich.
Add the bacon, eggs with cheese, hot sauce if desired, and parsley.
Top focaccia breakfast sandwiches and enjoy.

Focaccia Breakfast Sandwich With Bacon And Egg Recipe | Sip Bite Go
Ingredients
- 1 lb bacon
- 6 eggs
- Salt and pepper
- 1 tbsp butter
- 8 oz mozzarella cheese fresh, sliced
- 4 focaccia rolls halved
- 1 tsp hot sauce optional
- 2 tsp fresh parsley chopped

- First, cook bacon in the oven. Preheat the oven to 425 degrees F. Line a large rimmed sheet with parchment paper. Lay bacon on parchment paper without overlapping. Bake bacon for 8 minutes, flip, and continue baking for 5-10 minutes until bacon is cooked through to desired level of crispness. Transfer bacon to a paper towel lined plate and set aside.
- While the bacon cooks, crack 6 eggs in a bowl. Whisk eggs, salt, and pepper, together until combined.
- Move quickly to make the eggs. Heat a medium sized non stick pan on the stove to medium-high and add butter. When butter melts, add eggs. Gently use the back of a fork or a plastic spatula to keep the eggs from completely sticking to the bottom of the pan for about 30 seconds. - Add mozzarella cheese to the top of the hot eggs to melt while you assemble the focaccia breakfast sandwich. Toast the focaccia if desired, then add to the bottom of the sandwich the bacon, eggs with cheese, hot sauce if desired, and parsley. Top focaccia breakfast sandwiches and enjoy.
