This breakfast pizza with eggs and roasted tomatoes is the perfect brunch pizza and a tasty excuse to make “breakfast for dinner”. The garlic butter sauce is the perfect savory canvas for breakfast pizza with eggs. In this easy pizza recipe, I’ll teach you how to make breakfast pizza with eggs, how to quickly make roasted tomatoes, and how to bake eggs into pizza. You can make this breakfast pizza with premade crust OR fresh store bought dough. I’ll teach you how to use both in this tutorial. Let’s get cooking!

When we moved to the suburbs after 10+ years of city-living, we knew we had to do one thing to make it official: join Costco. Being a young family, there’s tons we can get at Costco (ohhh the pleasure of buying diapers in bulk!). But our baby doesn’t eat solids yet, and sometimes the two of us can’t finish all of the food before it hits the expiration date.

One of the things we love buying in bulk are eggs. And most cartons are gone within a week or two, long before the expiration date, especially if I’m in a baking mood.

And that’s why breakfast pizza with eggs and roasted tomatoes was born.

When I have a ton of eggs to use up, and it’s pizza night, or weekend pizza “brunch”, I love putting eggs on homemade pizza!

Eggs on pizza – especially on a chewy pizza crust – is my new favorite thing. I bet it will be yours, too.

To make this breakfast pizza, you’ll learn how to quickly roast cherry tomatoes and whip up a garlic butter sauce. In addition, you’ll need mozzarella cheese, pizza dough (fresh or premade crust), Parmesan cheese, and basil.

Step one: roast the tomatoes for the breakfast pizza topping

Make the roasted tomatoes in just a couple minutes. If you’re working with fresh pizza dough, then pre-bake the dough while you’re making the tomatoes. Scroll down for tips on prepping the pizza dough.

To roast the tomatoes, take out two cups of cherry tomatoes, olive oil, salt, pepper, garlic, and a little butter.

Add cherry tomatoes and olive oil to a large pan on the stove on medium heat. Stir regularly for about three minutes, until cherry tomatoes begin to soften and wrinkle.

Once tomatoes wrinkle, add garlic and butter, and reduce heat to medium-low.

Stir roasted cherry tomatoes with garlic for 30-60 seconds.

Preserve the garlic butter in the pan – it will be used for the breakfast pizza sauce. Set the roasted tomatoes aside.

Step two: prepare the pizza dough 

If you’re working with premade crust, like the one from Trader Joe’s in the photo above, then you won’t need to pre-bake the dough before adding the toppings. But I do recommend adding a little olive oil to the bottom and edges of the premade crust so it cooks better in the oven. Especially if you’re cooking the brunch pizza on a sheet pan.

To prep fresh dough for breakfast pizza, you’ll first cook the dough “naked”. Set the oven to 450 degrees. Stretch the fresh dough and put it on a baking sheet drizzled with olive oil. Par-bake the dough for 7 minutes without any toppings. Remove the dough from the oven and then move on to the next steps.

How to add eggs to breakfast pizza – step by step

The toppings for this breakfast pizza with eggs include a garlic butter sauce and roasted tomatoes. But go wild! Add anything you’d like. Bacon, prosciutto, and pesto are all great ideas for breakfast pizza toppings.

Using a spatula, spread the garlic butter from the roasted tomatoes pan on to the pizza crust. Add mozzarella cheese, leaving three distinct 3” circles, or wells, for the baked eggs. (photos 1 & 2)

One by one, crack each egg in a bowl and transfer the egg carefully, without breaking the yolk, to the wells. (photos 4 & 5)

Sprinkle eggs with salt and pepper.

Bake the breakfast pizza with eggs at 450 degrees for 5-10 minutes, until egg whites are completely set, and the egg yolks are cooked to your desired level. We like our yolks a little runny in my house.

Extra tips on how to bake eggs on pizza

If you’re a fan of carbonara pasta, eggs Benedict, or fried eggs, you’ll love learning how to bake eggs on pizza.

In this breakfast pizza with eggs and tomatoes, the mozzarella cheese is added to the pizza, leaving “wells” (aka holes) for the eggs. The eggs are carefully cracked one at a time, without breaking the yolks, and poured into each well. The pizza toppings are baked with the egg, and the entire pizza is done within 5-10 minutes.

How to bake eggs on frozen pizza

If you’re in a bind for dinner and wondering how to make frozen pizza more interesting, just add eggs!

During the final 5-8 minutes of baking frozen pizza, take it out of the oven and drop eggs on the pizza. For “egg security” purposes, you can try adding shredded cheese in a circle before dropping the raw egg on the pizza. This will create an egg well so the egg stays in place. Place the pizza back in the oven and cook until egg reaches the desired level of cooked – at least until the egg white completely sets.

Ingredients

  • 1 pizza dough fresh dough or premade crust
  • 2 cups cherry tomatoes
  • 2 tbsp olive oil divided
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp crushed red pepper
  • 1 tbsp garlic minced and divided
  • 1 tbsp butter
  • 3 eggs
  • 1.5 cup mozzarella cheese
  • 2 tbsp parmesan cheese grated
  • 1 tbsp basil fresh diced

Instructions

  1. Preheat oven and line a rimmed baking sheet with parchment paper drizzled with 1 tbsp olive oil. To learn the temperature to make breakfast pizza with premade crust, consult the directions on the package to find the oven heat setting.

    For making breakfast pizza with store bought dough, set the oven to 450 degrees. Stretch the fresh dough and put it on the baking sheet. Par-bake the dough for 7 minutes without any toppings. 

  2. Make the roasted tomatoes. Heat a large pan on the stove on medium heat. Add cherry tomatoes and olive oil. Stir regularly for about three minutes, until cherry tomatoes begin to soften and wrinkle. Add garlic and butter to the pan and reduce the heat to medium-low. Stir roasted cherry tomatoes with garlic for 30-60 seconds and turn off the heat before the garlic burns. Preserve the garlic butter in the pan, and set roasted tomatoes aside.

  3. Add the pizza toppings. Using a spatula, spread the garlic butter from the roasted tomatoes pan on to the pizza crust. Add mozzarella cheese, leaving three distinct 3” circles, or wells, for the baked eggs. Distribute roasted tomatoes on top of the mozzarella cheese.

  4. One by one, crack each egg in a bowl and transfer carefully, without breaking the yolk, to the wells. Sprinkle salt and pepper on the eggs. 

  5. Bake the breakfast pizza with eggs at 450 degrees for 5-10 minutes, until egg whites are completely set, and the egg yolks are cooked to your desired level. We like our yolks a little runny. 

  6. Finish with a sprinkle of Parmesan cheese and basil.
