Use butter to grease a 9×13 baking dish and set it aside.
Add onion and butter to a large skillet pan on the stove on medium-high heat. Stir regularly for about 5 minutes, until the onion is translucent - you want it to be just starting to turn brown.
Push the cooked onion to one edge of the pan. Add pork sausage to the other half of the pan, breaking it up with a spatula so it begins to brown in crumbles. Regularly stir both the sausage and onions on their own sides of the pan for about 5-10 minutes, until the sausage is browned. Nothing should be burning! In the final minute you can combine the sausage and onions together. In a large mixing bowl, add the whisked eggs, half and half, and salt. Whisk to combine. Add in the cooked onions and sausage, toasted bread cubes, and cheddar cheese. Stir to combine so the toasted bread cubes are covered with all the wet ingredients.
