Ingredients
Basic ingredients for griddled chicken breast..
- 2 lbs boneless skinless chicken breast
- Any seasoning of your choice (either a marinade or dry rub will work – I used two different marinades for this recipe, which are shared below…)

- 1 lb boneless skinless chicken breast
- ⅓ cup teriyaki sauce

How to make griddled chicken breasts

- Season chicken breast with either a marinade or dry rub.
- Preheat flattop griddle to medium high heat.
- Griddle chicken breasts for 10 – 15 minutes flipping frequently for an even cook and sear.
- Finish griddled chicken breasts once the internal temperature reaches 165 degrees F.
- Remove, rest, and enjoy.
Detailed recipe steps
- Prep all ingredients before cooking chicken breasts on the griddle. You’ll want them ready to use. I like to use a tray.
- Prepare chicken breasts by marinating them in Teriyaki or BBQ sauce as seen in this recipe (marinade info is below). Alternatively you can season the chicken breasts with any dry rub of your choice.
- Preheat Traeger Flatrock, Blackstone Grill, or whatever indoor griddle or outdoor flattop you’re using to a medium-high heat.
- Add cooking oil to coat the griddle.
- Griddle chicken breasts for 10 – 15 minutes flipping frequently for an even cook and sear on both sides. If your griddle is too hot, turn down the heat and add a little water (carefully – it might splatter) to the flattop to create some steam. Adding water helps avoid burning your chicken breast.
- Remove griddle chicken breasts at 165 degrees F as measured with an internal read thermometer.
- Rest griddled chicken breasts for at least 10 minutes and enjoy.

The difference is time and flavor. When you smoke chicken breasts, it will take 1 – 3 hours to finish cooking. Smoking chicken breast is a slow cook method.
When you griddle chicken breast, you will be cooking them hot and fast. The flattop will provide a nice sear and you’ll be finished cooking within 10 – 15 minutes depending on how thick your chicken breasts are.
It will take ~ 10 minutes depending on the size of your chicken breasts. As usual, it’s always recommended to cook your chicken breast to 165 degrees F internal temperature.
Preheat your griddle to medium-high heat then add oil or butter to the griddle surface. Place your chicken breasts onto the griddle and cook until done. Flip the chicken breasts regularly to ensure an even cook.
Start by preparing your favorite liquid marinade. Next, add the chicken breast to the marinade and toss to coat entirely. Cover and set in the fridge for 30 minutes minimum before griddling.

Meat thermometer recommendations
Every home chef needs a reliable meat thermometer to cook food perfectly.
On Sip Bite Go, you’ll often see me using:
- Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
- ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill.
It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature.
How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.
While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
