These griddle burgers are stacked high with griddled peppers and onions, sliced avocado, a fried sunny side up egg, and Everything Bagel seasoning. Why breakfast smash burgers are great to make…
- The key toppings: everything bagel seasoning, perfectly fried egg, griddled onions and peppers.
- Blends two worlds together. Burgers and breakfast don’t usually go hand-in-hand, but this smash burger perfectly marries them together.
- It’s super tasty. Having an egg with a runny yolk on top adds an extra flavor bomb that you wouldn’t get otherwise.
- Easy. The lovely thing about griddling, is that you can cook all of this at once. Use one burner for the onions and peppers, another for cooking the patties, and the third section for toasting buns and frying your eggs.

Here’s what you need to make breakfast burgers on the griddle grill.
Ingredients for making smashed breakfast burger patties
- 1 LB ground beef, 80/20 blend
- 2 tbsp butter, salted
- 1 tsp salt
- 1 tsp pepper
- 4 slices cheddar cheese
Griddled peppers and onions breakfast burger topping
- 2 tbsp butter, salted
- 1 yellow onion
- 1 red onion
- 1 red pepper
- 1 yellow pepper
- salt + pepper
- 1 tbsp avocado oil, optional, to add while cooking so they don’t burn, as needed

Griddled fried egg breakfast burger topping
- 1 tbsp butter, salted
- 4 eggs
Serve with griddled breakfast smash burger toppings
- 4 hamburger buns
- 1 tsp cilantro, fresh chopped
- 1 tsp everything bagel seasoning
- 1 avocado, sliced
- 1 tbsp hot sauce or worcestershire sauce
- You could also top with tomato, lettuce, etc.

How to make breakfast burgers
Now I’ll walk you through it…

- Make hamburger balls and chill them.
- Griddle onions and peppers.
- Smash burgers and melt cheddar cheese on top.

- Fry eggs.
- Assemble breakfast smash burgers topped with a sprinkle of everything bagel seasoning, avocado, cilantro, and hot sauce.
Now for the step by step breakfast burgers griddle recipe…
1. How to prep smash burgers from ground beef
- Divide up the ground beef into 4 equal portions. You don’t need to season them with salt and pepper at this time (you’ll do that when cooking the smash burgers on the griddle).
- Roll ground beef into hamburger beef balls. (don’t form into patties now, you’ll do that on the griddle)
- Transfer smash burger meat to the fridge to chill while preparing the rest of the ingredients.
2. How to griddle onions and peppers topping
- Heat one griddle burner area to medium heat (~350 – 375 degrees F).
- Add butter to the griddle and spread around.
- Add the sliced onions and peppers to the griddle surface.
- Season with a little salt and pepper.
- As needed, add a little avocado oil to the griddling onions and peppers while flipping them around every couple of minutes, as they cook. This will keep them from burning while they cook.
- Cook until done to your liking. Once done, we like to leave the burner on low, or turn it off but leave the onions and peppers on the griddle to stay warm while cooking the rest of the food.
3. How to griddle breakfast smash burgers
- First, get some sort of kitchen tool to help you smash burgers. I use the (gifted) Traeger Grills meat smasher. In the Sip Bite Go Oklahoma smash burger recipe, you’ll see our method for using a large metal spatula to smash burgers. If you use a spatula to make smash burgers, add a piece of parchment paper between the spatula and the burger patty as you smash it, so it doesn’t stick).
- Preheat one griddle burner area to high (500 degrees F). The Sip Bite Go recipe demonstration is on the Traeger Flatrock but this recipe will work on the Blackstone Grill or whatever outdoor griddle you’re using to cook.
- Add butter to the griddle and spread around.
- Place beef balls onto the griddle and then use a burger press to smash the balls into a thin circular burger patty.
- Season with salt and pepper and continue to griddle for 2 minutes.
- Flip burger patties, season with salt and pepper, top with a slice of cheese (cheddar), and cover with a steam dome to melt. About 2 minutes.
- Griddle smash burger until done to your liking.
- Remove smash burger patties from the griddle and place on top of your burger buns.
- Enjoy!
4. How to griddle hamburger buns
- Preheat one griddle burner area to low heat. (~300 degrees F)
- I don’t usually add more butter, because I cook the buns in an area of the griddle that was cooking the onions and peppers, and usually they toast up just fine. But if you want to, add butter to the griddle and spread around.
- Cook until done to your liking. I prefer to only griddle the inside of hamburger buns, not the outside, but you do you! Buns are toasted within 3 minutes.
5. How to griddle fried egg / sunny side up egg to breakfast burger topping
- Preheat one griddle burner area to low heat. (300 degrees F)
- Add butter to the griddle and spread around.
- Crack egg onto the buttered surface and cook until done. For a sunny side up egg as seen in this recipe, the egg will cook within 4 minutes.
- Cook the eggs until done to your liking.

6. How to assemble breakfast burgers
- Add toasted bun bottom to a plate.
- Add an overflowing amount of griddled peppers and onions.
- Add smash burger with cheese.
- Gently place the fried egg on top of the burger patty.
- Sprinkle egg yolk with everything bagel seasoning and fresh chopped cilantro.
- Top as desired with avocado and hot sauce, plus the top bun.

This one is easy. First make your beef balls. Once you place them onto the hot griddle surface, use a burger press or a heavy spatula and press down on the ground beef balls to smash them into a burger patty shape.
Cook at 500 degrees F for 2 – 3 minutes per side or until they reach your desired level of doneness.
Most definitely! Having a runny yolk adds some additional flavor to your smash burger.
Preheat your griddle to a low to medium low temperature. Melt some butter on the surface then place your egg right on top. Cook for about 4 minutes or until the egg is done to your liking. I enjoy a runny yolk, but if you like a firm yolk, then cook the egg for an additional minute.
