Ingredients
Here’s what you need to make steak fajitas on a griddle.
For the griddled fajita onions and peppers
- 2 peppers, sliced in strips
- 2 onions, sliced in strips
- 1 tbsp avocado oil (substitute butter)
- ¼ tsp salt
- ¼ tsp pepper
For the griddled steak fajitas
- 2 lbs skirt steak, substitute flank steak or similar cut of beef, sliced to 1” strips
- 1 tbsp avocado oil (substitute butter)
- 2 tbsp steak fajita seasoning (see Sip Bite Go fajita seasoning blend in this recipe post to make your own fajita seasonings from scratch)
Side ideas to assemble griddle steak fajita platter
- 1 tbsp cilantro, fresh chopped
- 1 lime, wedges
- 1 large avocado, smashed
- ½ cup sour cream
- ¼ cup cheddar cheese
- 2 cups Mexican rice
- 10 tortillas, flour or corn
- 6 corn on the cob, griddled
- ½ cup salsa
Steak fajitas seasoning
- 1.5 tsp chili powder
- ½ tsp pepper, black
- 1 tsp paprika
- ¼ tsp ground cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- ¼ tsp cayenne pepper
- 1.5 tsp salt
- 1.5 tsp sugar

Season fajita steak meat for griddling
- Prep fajita seasoning. To make it from scratch, whisk together all the steak fajita ingredients listed on this Sip Bite Go recipe page, or use store bought fajita mix.
- Prep fajita steak meat by seasoning it all over with fajita seasoning. The more fajita seasoning you add, the spicier it will get. Massage it in with your hands and store in the fridge until it’s time to griddle the fajitas.
First, start cooking the griddled fajita vegetables
Here we also cooked griddle corn on the cob at the same time…
- Griddle cooking note: When we griddle this version or cook our other recipe, for chicken fajitas on griddle, we like to heat all the burners and add specific ingredients to each section. The onions and peppers take up 1-2 burner areas, and the steak meat takes up about 1 area. In the other area, the third burner, you can make something like griddled corn on the cob or grill up the limes, or make another side you like.
- Preheat Traeger Flatrock, Blackstone Grill, or whatever indoor griddle or outdoor flattop you’re using to medium-high heat.
- Prep the flat top for griddle fajita veg. Add cooking oil or butter to coat the griddle. Drop the peppers and onions onto the heated griddle. Flip them around and season with salt and pepper.
- Flip peppers every few minutes.
- Griddle peppers and onions until they are soft and translucent, which takes about 15 minutes. Drizzle a little water or oil as needed to prevent fajita vegetables from sticking to the griddle. Turn the griddle burner heat down to low when griddled onions and peppers are close to done, or transfer them to a plate or fajita platter.
Once peppers and onions are cooking, griddle steak fajita meat
- Preheat the griddle. We like a griddle temperature of medium-high to medium for griddling this dish.
- Prep the flat top for cooking fajita steak. To do this, add cooking oil or butter to the griddle.
- Griddle steak for fajitas. Once butter/oil melts, add the raw steak in a flat layer.
- Flip fajita steak strips regularly so they don’t burn. Drizzle steak as needed with a little oil to prevent steak from sticking to the griddle.
- Finish cooking steak fajitas on the griddle until done to your liking. You want the beef to get a nice sear, but they will cook quickly, in about 5-10 minutes. We like a fajita steak “done temp” of about 130 degrees F, as measured with an internal read thermometer, because the strips are so small and we prefer the inside a bit pink. Cooking it to this temperature prevents the meat from being too chewy. The strips seem to continue cooking a little once pulled, especially if they stay hot in a pile on a fajita platter.
- Plate your griddle steak fajita platter with your favorite Tex Mex / Mexican-inspired condiments and sides, and enjoy.
