Here’s what you need to make griddled corn on the cob.
- 4 ears corn on the cob (fresh or frozen, can cut in half like in the Sip Bite Go recipe demonstration video)
- 1 tbsp butter (more or less as desired, or use avocado oil to grease the griddle)
- ¼ tsp salt
- ⅛ tsp pepper
- 1 tsp cilantro, freshly chopped (for serving)
- 1 tsp cotija cheese

How to cook corn on the cob on a griddle
Now I’ll walk you through it…
Quick look at griddled corn on the cob
- Fresh corn on the cob: Remove corn from the husk.
- Frozen corn on the cob: remove from packaging.
- Simmer frozen or fresh corn on the cob in water until half cooked and drain.
- Preheat the griddle to medium low heat.
- Place corn onto the griddle and sear all sides until cooked through.
- Remove and enjoy.

- Fresh corn on the cob: Remove corn from the husk.
- Frozen corn on the cob: remove corn from packaging.
- Boil corn. First, you will boil the corn on the cob to cook it thoroughly before finishing the corn on the cob on the griddle. To do this, add water to a large pot with ½ tsp salt. Add corn and bring to a boil over high or medium-high heat. Boil corn on the cob for about 5-10 minutes, until the corn is cooked through. Drain.
- Preheat Traeger Flatrock, Blackstone Grill, or whatever indoor griddle or outdoor flattop you’re using to medium heat.
- Prep the flat top for griddled corn on the cob by adding oil or butter to the griddle. Add corn on the cob to the heated griddle. Season with salt and pepper as desired.
- Flip griddle corn on the cob every few minutes. You want the corn kernels to brown a little bit, which makes them tasty. Drizzle a little water or oil as needed to prevent corn from sticking to the griddle.
- Griddle until corn is seared and a little browned all over, about 10 minutes.
- Cool and serve as desired. We like toppings like a sprinkle of cilantro and cotija cheese.

Meat thermometer recommendations
Every home chef needs a reliable meat thermometer to cook food perfectly.
On Sip Bite Go, you’ll often see me using:
- Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
- ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill.
It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature.
How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.
While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
