    Smoked limes make delicious cocktails in this recipe for smoked margaritas using the Traeger pellet grill. I’ve learned some very particular tricks for making a perfectly balanced smoky margarita, which I’ll share with you today. Let’s smoke drinks!

    Ingredients for smoking limes

    • Limes (I like larger limes because they’re easier to squeeze the juice from, but key limes are sweet and work as well)

    Ingredients for smoked lime margaritas

    • Sugar, white
    • Water, boiling / hot
    • Lime juice
    • Tequila (or try a similar liquor like mezcal)

    Detailed recipe steps for smoking limes

    1. Preheat Traeger Grills or Pitt Boss or whatever pellet grill you’re using to 250 degrees F. 
    2. Prep limes for your smokey margarita by cutting them in half and arranging them sliced side UP on a wire rack (which makes it easier to take them on and off the Traeger smoker).
    3. Smoke limes for 45 minutes at 250 degrees F. 
    4. Remove and let cool. 
    5. Serving tip: limes will be super juicy after smoking them. Squeeze the juice out, and the pulp will probably come out too. But actually, you’ll want to discard the pulp, as I learned when experimenting with smoked salsa, because the pulp will make smoked limes bitter. So use a sieve to extract the pulp from the smoked lime juice before enjoying. Store in the fridge for a few days. 

    How to make smoky margaritas with smoked limes

    1. Make simple syrup. Add equal parts hot water and sugar together and mix until liquid dissolves. Let it cool.
    2. Line smoky margarita glass with a salt rim (optional). Run a lime wedge around the top of the cocktail glass. Dip in a dish or bowl with salt in it, so the salt sticks.
    3. Fill a glass with ice. 
    4. Add smoked cocktail ingredients. Add 1 or 1.5 shots (equal parts) of the ingredients: lime juice, tequila, and simple syrup.

    How do you make a margarita?

    Here’s my favorite margarita recipe… Fill a glass with ice. Add 1 or 1.5 shots (equal parts) lime juice, tequila, and simple syrup (which is equal parts hot water and sugar melted together to become liquid). 

    How long does smoked lime juice last?

    Store smoked lime juice in the fridge for a few days, after removing the pulp first with a sieve, so it doesn’t become bitter. 

    Which wood chips do you use for smoking cocktails?

    You can really play with flavors when it comes to the right pellets to use for smoked cocktails like this smoky margarita. I’ll usually go for something stronger like hickory or mesquite and smoke them at the same time as making smoked queso dip. Other times, for a more fruity, light flavor, cherry and apple are great choices too.

    Meat thermometer recommendations

    Every home chef needs a reliable meat thermometer to cook food perfectly. 

    On Sip Bite Go, you’ll often see me using:

    1. Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
    2. ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill. 

    It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature. 

    How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.

    While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
