Here’s what you need to make these tasty brie baguette toasts.

For caramelizing shallots
- Shallots
- Olive oil
- Salt (coarse sea salt or kosher salt)
For assembly brie crostinis
- Baguette
- Brie cheese
- Balsamic glaze or honey (optional)
- Cilantro, fresh chopped

Detailed recipe steps
- Dice shallots. Cut off ends of the shallot and slice it in half lengthwise. Remove paper from outside of shallot. Slice to ½” segments, the long way. Turn and dice shallots small, into ½” segments.
- Caramelize shallots for brie toasts. Set a medium skillet or pan on the stove to medium high heat. Add olive oil and diced shallots. In a couple minutes, once oil begins bubbling and shallots begin browning and sizzling in the pan, add salt. Reduce heat to medium and regularly stir for 5-10 minutes, until shallots caramelize to your desired level of caramelization. The more brown, the stronger the taste. Add 1 tbsp of water if the caramelized shallots begin to brown too much (aka burn!) Set aside.
- Toast bread, or just use it fresh. Toast it in the oven at 400 degrees F for a few minutes, until lightly browned. I don’t find it necessary to add olive oil, but if you want it extra crunchy, brush some on top before toasting baguettes in the oven.
- Assemble brie crostinis. Smear brie on baguettes. Top with diced caramelized shallots. Drizzle with honey or balsamic glaze if desired. Top with a sprinkle of fresh cilantro. Enjoy!
Add leftover caramelized shallots to pulled pork pasta, as a topping for tri tip, or on top of smoked pork chops.
FAQs
I usually serve this appetizer with fresh sliced brie smeared on the toast, but you can make this a baked brie crostini by adding the cheese on top of the toast. Bake them on a baking sheet in the oven or toaster oven or even the air fryer for a couple of minutes before adding the shallots or your other brie toast toppings.
