6lbslimeshalved (I like larger limes because they’re easier to squeeze the juice from, but key limes are sweet and work as well)
Ingredients for smoked lime margaritas (use equal parts, this example will make a few margaritas)
½cupsugarwhite
½cupwaterboiling / hot
1cuplimejuice
1cuptequila

How to smoke limes for smoking limes
Preheat Traeger Grills or Pitt Boss or whatever pellet grill you’re using to 250 degrees F.
Prep limes for your smokey margarita by cutting them in half and arranging them sliced side UP on a wire rack (which makes it easier to take them on and off the Traeger smoker).
Smoke limes for 45 minutes at 250 degrees F.
Remove and let cool.
Serving tip: limes will be super juicy after smoking them. Squeeze the juice out, and the pulp will probably come out too. But actually, you’ll want to discard the pulp, as I learned when experimenting with smoked salsa, because the pulp will make smoked limes bitter. So use a sieve to extract the pulp from the smoked lime juice before enjoying. Store in the fridge for a few days.
How to make a margarita with smoked limes
Make simple syrup. Add equal parts hot water and sugar together and mix until liquid dissolves. Let it cool.
Line smoky margarita glass with a salt rim (optional). Run a lime wedge around the top of the cocktail glass. Dip in a dish or bowl with salt in it, so the salt sticks.
Fill a glass with ice.
Add smoked cocktail ingredients. Add 1 or 1.5 shots (equal parts) of the ingredients: lime juice, tequila, and simple syrup.
