If you love flavorful meat with little excess fat, then griddled sirloin steak is the way to go. Cooking on the griddle will give your sirloin steak a tremendous sear with a juicy warm red center that will hit your tastebuds perfectly. Grab a sirloin steak, fire up the griddle, and I’ll teach you how it’s done. Let’s go.
How long to cook sirloin steak on the griddle?
If your steak is ~2 pounds, 1 – 1.5 inch in thickness, it will take about 6 – 7 minutes in total cooking at a medium high griddle temperature. With any meat though, check the internal temperature for doneness.
When is sirloin steak cooked?
Depending on what temperature you like your steak will determine when it’s cooked to your liking. If you want a medium rare finish, remove the steak at 125 degrees F internal temp and let rest for 10 minutes to come up to 130 – 135 degrees F.
For a medium steak, remove the steak from the griddle at 135 degrees F internal temp and rest for 10 minutes bringing the internal temperature up to 140 – 145 degrees F.
For rare, remove at 115 degrees F and for well done, remove at 145 degrees F internally.

Here’s what you need to make sirloin steaks on the griddle.
- 1.5 – 2 lb sirloin steak
- 1 ½ tbsp olive oil
- 2 tbsp BBQ dry rub seasoning

How to cook griddled sirloin steak (detailed recipe steps)
Now I’ll walk you through the detailed recipe for sirloin steak with extra tips…
- Preheat Traeger Flatrock or Blackstone or whatever griddle that you’re using to medium high heat.
- Prep sirloin steak for griddling. Pat sirloin steak dry with a paper towel and rub ½ tbsp olive oil over the steak so the seasoning can adhere to the steak.
- Season sirloin steak on all sides with the BBQ dry rub seasoning.
- Add the remaining olive oil to the hot preheated griddle.
- Place the seasoned sirloin steak directly onto the griddle. TIP – be sure to lay the steak away from you so the hot oil doesn’t splash back at you.
- Cook sirloin steak for about 2 – 3 minutes on one side.
- Flip sirloin steak and cook for about another 2 – 3 minutes.
- Finish griddled sirloin steak by griddling the edges so you have a sear on all sides of the steak. (~30 seconds per edge)
- Remove griddled sirloin steak when it reaches 125 degrees F as measured with an internal read thermometer for a medium-rare finish. TIP – If you want a medium finish, remove the steak once it reaches 135 degrees F internally. The internal temp will rise during the next step.
- Rest. Allow your griddled sirloin steak to rest for at least 10 minutes prior to slicing. This resting period will let the internal temperature rise while the juices settle back into the steak.
- Slice and enjoy.

Meat thermometer recommendations
Every home chef needs a reliable meat thermometer to cook food perfectly.
On Sip Bite Go, you’ll often see me using:

How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever before cooking them.
While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
