Ingredients
- 3 cups chicken breast, cooked, dicedย
- 2 tablespoons buffalo sauce
- 2 tablespoons BBQ sauce
- 2 cups shredded cheddar cheese
- ยฝ cup diced yellow onion
- 4 burrito-size flour tortillas
- 1 tablespoon butter

How to make chicken taquitos on a griddle
- Divide the cooked diced chicken evenly into two separate bowls.
- Add 2 tablespoons of buffalo sauce to one bowl and 2 tablespoons of BBQ sauce to the other bowl.
- Add 1 cup of shredded cheddar cheese and ยผ cup diced yellow onion to each bowl.
- Mix each bowl’s ingredients thoroughly to coat the chicken.
- Lay out the 4 burrito size flour tortillas.
- Spoon the chicken and cheese mixture onto the center of each tortilla, in a line, forming the taquitos.
- Roll the tortillas tightly around the filling and secure with toothpicks.
- Prepare any additional sides you’d like to cook on the griddle, such as onions, broccoli, or rice.
- Heat the griddle and set 2 burners to medium heat.
- Spread 1 tablespoon of butter evenly over the griddle surface where the taquitos will be placed.
- Once the butter is hot and bubbling, place the taquitos on the griddle.
- Cook the taquitos on medium heat, flipping them with tongs to ensure even cooking.
- As the cheese melts, it will help bind the chicken and tortilla together.
- Remove the taquitos from the griddle when they are browned to your liking.
- Serve the taquitos with your favorite sides and guacamole. Enjoy!
