    Griddle Cooking Chicken Taquitos on the Traeger Flatrock Grill

    Ingredients

    • 3 cups chicken breast, cooked, diced 
    • 2 tablespoons buffalo sauce
    • 2 tablespoons BBQ sauce
    • 2 cups shredded cheddar cheese
    • ½ cup diced yellow onion
    • 4 burrito-size flour tortillas
    • 1 tablespoon butter

    Griddled Chicken Taquitos on Traeger Flatrock Grill

    How to make chicken taquitos on a griddle 

    Prepared chicken taquitos
    1. Divide the cooked diced chicken evenly into two separate bowls.
    2. Add 2 tablespoons of buffalo sauce to one bowl and 2 tablespoons of BBQ sauce to the other bowl.
    3. Add 1 cup of shredded cheddar cheese and ¼ cup diced yellow onion to each bowl.
    4. Mix each bowl’s ingredients thoroughly to coat the chicken.
    5. Lay out the 4 burrito size flour tortillas.
    6. Spoon the chicken and cheese mixture onto the center of each tortilla, in a line, forming the taquitos.
    7. Roll the tortillas tightly around the filling and secure with toothpicks.
    8. Prepare any additional sides you’d like to cook on the griddle, such as onions, broccoli, or rice.
    9. Heat the griddle and set 2 burners to medium heat.
    10. Spread 1 tablespoon of butter evenly over the griddle surface where the taquitos will be placed.
    11. Once the butter is hot and bubbling, place the taquitos on the griddle.
    12. Cook the taquitos on medium heat, flipping them with tongs to ensure even cooking.
    Griddle Cooking Chicken Taquitos
    1. As the cheese melts, it will help bind the chicken and tortilla together.
    2. Remove the taquitos from the griddle when they are browned to your liking.
    3. Serve the taquitos with your favorite sides and guacamole. Enjoy!
