    Cut of steak to griddle

    2.5 LB Beef Loin…

    Or similar cuts of beef called Flap Meat, or Top Sirloin steak, or Bottom Sirloin.

    Griddled Beef Loin Top Sirloin Steak with vegetables on a BBQ platter

    For the Marinade

    • ⅓ cup Olive Oil
    • ⅓ cup Soy Sauce
    • 1 tbsp Red Wine Vinegar
    • ½ medium Lemon, Fresh Juice,
    • 1 tbsp Dijon Mustard,
    • 2 tbsp Brown Sugar
    • 1 tbsp Garlic, Fresh Minced
    • ½ tsp Crushed Red Pepper
    • ½ tsp Black Pepper, Ground
    • 1 tsp Ginger
    • 1 tbsp Cilantro, Fresh Chopped

    For griddle cooking and topping

    • 2 tbsp butter, salted (or use oil as desired)
    • 1 tbsp cilantro, fresh chopped

    How to cook beef loin top sirloin on a griddle flattop  

    Now I’ll walk you through it…

    You can also cook this on a hot cast iron skillet inside!

    Quick look at griddle cooking beef loin 

    1. Make marinade for griddled beef loin. 
    2. Marinade steak.
    3. Add butter to med-high hot griddle.
    4. Griddle, flipping halfway through.
    5. Remove and rest when done to your liking.

    Detailed recipe steps

    1. Make marinade for griddled beef loin. 
    2. Prep all vegetable sides like the Sip Bite Go griddled broccoli and griddled onions recipes and any other ingredients before cooking beef loin flap meat on the griddle. You’ll want them ready to use. I like to use a tray and bring everything outside at once. 
    3. Preheat Traeger Flatrock Griddle, Blackstone Grill, or whatever indoor griddle or outdoor flattop you’re using to medium-high. Take beef loin out of the fridge and let it come up to room temperature a bit.
    4. Add butter and/or cooking oil to coat the griddle. Spread it around.
    5. Add beef loin / top sirloin meat to the hot griddle. Discard remaining marinade.
    6. Griddle cook the beef loin for about 5-7 minutes, until it’s seared and browned to your liking.
    7. Flip griddled steak and finish cooking until done to your preferred temperature as measured with an internal read thermometer. We cooked the one in the Sip Bite Go recipe demonstration until it reached about 130 degrees F.
    8. Finish by resting for about 10 minutes, and enjoy.

    Meat thermometer recommendations

    Every home chef needs a reliable meat thermometer to cook food perfectly. 

    On Sip Bite Go, you’ll often see me using:

    1. Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
    2. ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill. 

    It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature. 

    How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.

    While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!

    Why I wrote this recipe

    Inspiration started at the store when I found a piece of beef that looked beautiful for our family dinner that weekend.

    The way I like to end the weekend on a Sunday night is with some good food, chill time with the family…

    And maybe baking something in the oven for breakfast the next day (like these peach mini loafs or banana bread muffins). It just depends on what’s in the fridge.

    I was happy to find this good looking flap meat / top sirloin to griddle from Costco.

    It’s perfect for a taco night, which I love griddle cooking taco meat for…

    • ⅓ cup Olive Oil

    • Make marinade for griddled beef loin. Mix all ingredients together in a large bowl. Add beef loin steak to marinate in the fridge for 30-90 minutes.
    • Prep all vegetable sides like the Sip Bite Go griddled broccoli and griddled onions recipes and any other ingredients before cooking beef loin flap meat on the griddle. You’ll want them ready to use. I like to use a tray and bring everything outside at once.
