    Ingredients

    Here’s what you need to make flanken ribs on the smoker. My recipe is similar to what you’d expect from smoked Korean Kalbi Beef short ribs, with some creative liberties taken along the way.

    For marinated smoked Korean Short Ribs (AKA Flanken Ribs)

    • 2.5 LB Korean Short Ribs (AKA Flanken Ribs – the kind cut across the bone)
    • Soy sauce
    • Honey (or use ​​brown sugar)
    • Red wine vinegar
    • Sesame oil (substitute olive oil)
    • Lime juice
    • Garlic
    • Red pepper flakes
    • Cilantro

    For serving (optional)

    • Roasted red pepper (the kind that comes marinated in jar)
    • Cilantro
    • Sesame seeds

    How to make smoked flanken ribs

    Here are the step by step instructions for making these tasty flanken ribs on the Traeger.

    Quick recipe overview

    1. Make the marinade.
    2. Marinate flanken ribs before smoking for 2+ hours.
    3. Preheat Traeger.
    4. Add flanken short ribs to smoker grill grates.
    5. Smoke flanken ribs a few minutes, flip and smoke another few minutes until completely tender (about 15 minutes total). 
    6. Serve and enjoy.

    Detailed instructions

    1. Make the smoked Korean short ribs marinade. Combine and whisk all ingredients together in a large bowl. (If desired, remove ¼ cup of the marinade and set it aside so it doesn’t touch the raw meat) for serving the ribs. Cover the bowl with plastic wrap. Add short ribs, toss them to coat evenly, and marinade for ideally 2 hours, up to overnight, in the refrigerator.
    2. When it’s time to smoke flanken ribs, preheat the Traeger smoker pellet grill to high 500℉ for 15 minutes with the lid closed.
    3. Remove ribs from marinade and throw away the remaining marinade that touched the raw meat.
    4. Once the pellet grill is heated to 500℉, Add the short ribs to the grill grates. Close the lid and smoke flanken ribs for 5 minutes. Flip and smoke for another 3 minutes-5 minutes. They should be completely tender. 
    5. Serve with a sprinkle of diced red pepper, cilantro and sesame seeds.

    FAQs

    What do you serve with smoked flanken ribs?

    Serve them on a simple dish of rice or cauliflower rice. To get a little fancier, add something like this jalapeno ranch dressing to drizzle on top.

    Do you need to marinate flanken ribs before smoking them?

    If you’re in a pinch and don’t have 2 hours or overnight to marinate them, I’d still try to get the ribs in the marinade for at least 15 minutes. It will add more flavor and help tenderize the meat.

    Meat thermometer recommendations

    Every home chef needs a reliable meat thermometer to cook food perfectly. 

    On Sip Bite Go, you’ll often see me using:

    1. Meater thermometer – a fancy wireless thermometer that connects to a phone app – gifted to me from a Traeger partnership.
    2. ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill. 

    It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature. 

    How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.

    While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!

    Ingredients
