Here’s a tasty, healthy vegetarian pita sandwich that’s ready in 5 minutes. Cucumber, avocado, any other vegetables you’d like, and regular or whole wheat pita bread make this a satisfying lunch recipe. Let’s make ‘em.

Ingredients
These are my favorite veggie pita sandwich fillings. Use them to inspire your own recipe.
- Pita bread (Greek style, not pita pockets, regular or whole wheat)
- Creamy dressing (blue cheese dressing, feta dressing, ranch dressing, etc.)
- Avocado
- Onion
- Carrot
- Persian cucumber
- Cilantro
- Cheese (I often use provolone)
- Lettuce leaves (my preference is red leaf or butter leaf lettuce)
Tip – Turn this recipe into a vegan pita sandwich by swapping out the dairy ingredients. Try a vegan spread (like a tofu spread) or basil hummus and vegan cheese. Or, just drizzle a little olive oil, squeeze fresh lemon juice, and sprinkle a little salt and pepper to add flavor.
How to make vegetarian pita sandwiches
Let’s walk through it…
- To the inside of one pita bread, smear creamy dressing and set aside.
- To the inside of the other pita bread, smash an avocado with the back of a fork.
- Top avocado with onion slices, carrot slices, and Persian cucumber slices.
- Sprinkle pita sandwich fillings with cilantro. Then top with cheese and lettuce leaves.
- Slice and enjoy.

If you are using a regular pita with pockets, and are having trouble with your pita pockets breaking, here’s an alternate way to create sandwiches. Rather than the standard halves, cut just the top quarter of your pita sandwich off, then slip that inside your pocket. The bottom will be reinforced, and, as an extra bonus, you’ll be able to slip even more of that delicious cucumber avocado filling inside!
The sky is the limit, so roam your fridge to find some delicious pita sandwich fillings like sweet corn, halved cherry tomatoes and sliced bell peppers. Or make some sauteed onions and peppers or caramelized onions to load inside the pita bread layers.
