    8 oz Petite Filet Mignon Steak Dinner

    What’s the difference between ​​petite filet vs filet mignon?

    Petite filet mignon cuts are typically less expensive than large filet mignon steak. They cook nice and fast, and are the perfect portion for a weeknight meal. The petite filet is part of the chuck beef area (front of the cow in the shoulder) so they’re pretty lean, but super flavorful and juicy. The filet mignon cut is in the beef tenderloin (back of the cow). You might also find filet cut into ​​1-2” medallions at your local butcher.

    Ingredients

    Here’s what you need to make my one pan petite filet mignon with potatoes and vegetables.

    Filet mignon

    • Petite filet mignon ( 6-8 oz cuts of steak)
    • Salt and pepper
    • Garlic powder
    • Olive oil
    • Butter

    Potato and vegetable hash

    • Yellow potatoes
    • Pepper
    • Onion
    • Olive oil
    • Butter
    • Salt

    For plating (optional)

    • Romesco sauce (or basil spinach pesto, etc)
    • Fresh parsley

    How to cook petite filet mignon

    Now I’ll walk you through it…

    1. Preheat the oven to 400 °F. Remove the filet mignon from the fridge, sprinkle it all over with seasonings (salt, garlic powder, pepper) and set it on the counter to come up to room temperature.
    2. Make the potato and vegetable hash. Add the diced potato, pepper, onion, olive oil, butter, and salt to a large pan (cast iron skillet is ideal) on the stove set to medium-high. Stir regularly (every 1-2 minutes) so the vegetables start to brown but don’t burn.
    3. Add ½ cup water to the hash, turn the burner down to medium-low, cover with a lid, and let the vegetables simmer for about 10 minutes until liquid evaporates and the potatoes are fork-tender. Transfer to a serving dish or plates and cover to keep warm while making the filet mignon in the same pan.
    4. Pan sear filet mignon. Turn the heat of the pan up to medium high and add olive oil and butter. When butter melts and starts to bubble, add filet mignon and let it sear for 5 minutes or until a brown crust forms.
    5. Flip the steak and sear it for 2 minutes. Add an oven safe meat thermometer like you see in the Sip Bite Go video (if you have one, otherwise just put it in the oven without one). Move pan seared petite filet to the preheated oven.
    6. Cook filet mignon in the oven until it reaches an internal temperature of 140 degrees F (medium rare) or your desired steak temperature. The cooking time for the petite filet in my video took 5-10 minutes.
    7. Remove cooked petite filets from the oven and let steak rest on a cutting board (or right on the plates, over the hash) for about 10 minutes.
    8. To plate the filet mignon and potato meal, add a spoonful of the hash to the center of a plate. Add the cooked filet mignon. Add romesco sauce (or any favorite sauce) on top with a few sprigs of fresh parsley. Enjoy!

    What goes with a petite filet?

    In addition to the potato and vegetable hash, there are a ton of potato side dishes that go with filet mignon. Try potatoes gratin with vegetables, or my air fryer baby potatoes, or sous vide little potatoes.

    What sauces are good on petite filet?

    In the recipe here you’ll see I used romesco sauce, which you can make at home or buy premade. Pesto is a tasty choice. Tzatziki sauce is a good idea. And this compound garlic herb butter or jalapeno ranch dressing or creamy peppercorn sauce would be great on top as well.

    What meat thermometer do you use?

    The great thing about the meat thermometer you see in the video is that I can stick it in the steak, then put the steak in the oven. While the steak cooks, it reads the temperature of the petite filet and beeps when it’s ready at medium rare (or whatever temperature is selected). I’ve owned it for years. You can buy the same ThermoPro meat thermometer and use it for smoked foods and grilled foods, too.
