Instructions
Preheat the oven to 400 °F. Remove the filet mignon from the fridge, sprinkle it all over with seasonings (salt, garlic powder, pepper) and set it on the counter to come up to room temperature.
Make the potato and vegetable hash. Add the diced potato, pepper, onion, olive oil, butter, and salt to a large pan (cast iron skillet is ideal) on the stove set to medium-high. Stir regularly (every 1-2 minutes) so the vegetables start to brown but don’t burn.
Add ½ cup water to the hash, turn the burner down to medium-low, cover with a lid, and let the vegetables simmer for about 10 minutes until liquid evaporates and the potatoes are fork-tender. Transfer to a serving dish or plates and cover to keep warm while making the filet mignon in the same pan.
Pan sear petite filet mignon. Turn the heat of the pan up to medium high and add olive oil and butter. When butter melts and starts to bubble, add filet mignon and let it sear for 5 minutes or until a brown crust forms.
Flip the steak and sear it for 2 minutes. Add an oven safe meat thermometer like you see in the Sip Bite Go video (if you have one, otherwise just put it in the oven without one). Move pan seared petite filet to the preheated oven.
Cook filet mignon in the oven until it reaches an internal temperature of 140 degrees F (medium rare) or your desired steak temperature. The cooking time for the petite filet in my video took 5-10 minutes.
Remove cooked petite filets from the oven and let steak rest on a cutting board (or right on the plates, over the hash) for about 10 minutes.
To plate the filet mignon and potato meal, add a spoonful of the hash to the center of a plate. Add the cooked filet mignon. Add romesco sauce (or any favorite sauce) on top with a few sprigs of fresh parsley. Enjoy!
