My friend recently asked for a romantic pasta dish for two, and this is what I recommended. Chicken piccata pasta in a white wine sauce. I told her it would bring her and her soon-to-be husband together in the kitchen. Since my friend and her groom is just getting acquainted with making full dinners from scratch, and they want to keep cooking fun, I wanted to keep this recipe simple so it would be a success.

So this recipe is my take on an easy chicken piccata pasta. There is no flour. No broth. Just thinly pounded chicken tenders, Chardonnay, zesty lemon, perfectly roasted tomatoes and a pop of flavor from capers and fragrant fresh herbs. It is a romantic dinner for two that can bring couples together in the kitchen. I told her, down the line she can double the recipe to feed a family of four or to serve as an easy pasta dinner for guests. Let’s get cooking!

To celebrate the anniversary of my own engagement date with my husband, we made this chicken piccata pasta in a white wine sauce with a couple pieces from the Calphalon® Premier™ Space Saving Cookware Set.

Hover over the image below to start shopping for this awesome, space-saving cookware set!

The cookware is shared throughout this recipe and later in this post, I share my experience trying it.

Ingredients for chicken piccata pasta

Long, thick pasta noodles, like fettuccini or pappardelle shapes, are great pasta choices for chicken piccata. Smaller, circular shapes like rigatoni and ziti also work well for chicken piccata pasta.

Chicken breast tenders cut in 1-2 inch wide strips are best for this chicken piccata pasta. Using these smaller pieces of chicken will help the dish cook quickly and absorb more flavor than full pieces of chicken breast.

Roasted cherry tomatoes in a garlic shallot butter sauce add a beautiful color and sweetness to this dish.

And the star of this dish, the white wine sauce, is so easy to whip together! It’s made with a dry white wine – preferably Chardonnay – comes together with fresh squeezed lemon juice, butter, salty capers and fresh chopped parsley. For the final touch, fresh grated parmesan is a must.

Things you don’t need for this recipe? You don’t need flour or broth, which are sometimes found in other chicken piccata recipes. This version has you covered on flavor without those ingredients.

How to make chicken piccata pasta in a white wine sauce – step by step

First, bring water to a boil in a large pot on the stove.

While preparing other components of this recipe, cook pasta to al dente. Make sure not to overcook pasta, because it will cook a little more when added to the sauce in the final step. When the pasta is done, drain it, then coat it with a drizzle of olive oil. Set it aside.

Pound chicken breast tenders between two pieces of plastic wrap until they are 1/4 inch thick. Season the chicken with salt and pepper.

Heat a large pan with deep sides to medium-high heat. Add olive oil, and once the oil is hot (it will appear shiny and sizzle when chicken is added), add the chicken.

Brown each side of the chicken tenders until golden brown – about 3-4 minutes on each side. Remove chicken from pan.

In the same pan on medium heat, add cherry tomatoes, olive oil, and a sprinkle of salt and pepper.

Stir regularly for about 3 minutes, until cherry tomatoes begin to soften and wrinkle. Remove tomatoes from pan and set aside.

Use the same pan on medium heat to melt the butter with the garlic and shallots. Stir regularly for 1 minute, making sure the garlic does not burn. Add white wine and reduce liquid in half by whisking the garlic and shallots in the sauce for 1 minute. Add lemon juice and whisk for 1 minute.

Turn pan down to low heat, add butter, capers, parsley and the al dente pasta to the white wine sauce.

Add chicken to the sauce and let it simmer on medium-low for 2 minutes. Sprinkle with fresh grated parmesan, parsley or basil.

Did you notice my sweet new cookware?

One of my favorite ways to come together as a couple at the end of the day is to whip up a meal in the kitchen with Chef Hubs. In fact, I always suggest to engaged and newlywed couples that they spend time in the kitchen – cooking can be a very romantic way to bond.

To keep things positive and upbeat, using quality kitchen equipment is a must to make cooking easy and fun. With the right cookware, a romantic meal for two  will cook evenly and look beautiful every time.

That’s why I’m happy to share the inside scoop on the brand new Calphalon® Premier™ Space Saving Cookware Set. Their line of beautiful and practical cookware is a great choice for soon-to-be-married couples to add to their Bed Bath and Beyond wedding registry.

There’s nothing like starting a new marriage with a fully equipped kitchen stocked with quality cookware.

Why I love cooking with the new Calphalon® Premier™ Space Saving Cookware Set:

  • This set saves space in the kitchen. In fact, it set saves 30% more space** than like non-stacking Calphalon® Cookware items when stacked like diameter Premier™ Space Saving items. (**cookware must have same diameter)
  • It doesn’t require rocket science to store. I was amazed to find out the cookware can stack & nest in any order** (**cookware must have same diameter)
  • Quick, even heating. Which is super important, especially when cooking meat and cooking picture-perfect food for guests.
  • It’s safe to use metal utensils with this set! You can’t say that about all cookware.
  • It’s for use both on the stove top and the oven (where I like to finish many of my dishes) up to 450 degrees F
  • Even the glass lids are space-saving! They store flat with the matching cookware.
  • Limited Lifetime Warranty. Handy to have, just in case!
  • Beautiful, sleek cookware that is also ideal for serving. Perfect for one-pot meals you want to present from oven to table.
  • It’s the latest and greatest from Calphalon®. In fact, it’s the flagship cookware set they sell.

Wow-factor. I haven’t met one person who doesn’t know about the premium and reputable cookware Calphalon® is known for in the cooking industry. They have 50 years of commercial-grade stovetop performance.

What to serve with chicken piccata pasta

Curious what side dish goes with chicken piccata pasta in a white wine sauce? Here are a few of my favorite things to serve with chicken piccata: green beans, broccoli, or this caprese cucumber salad.

You can make just the chicken for this dish and serve it with a variety of starches. Serve chicken piccata with roasted fingerling potatoes, mashed potatoes, rice or risotto.

Tasty tips and notes for making chicken piccata pasta

  • The tomatoes add a sweet bite and pop of color. See the step-by-step guide on how to make roasted cherry tomatoes.
  • Use fresh lemon juice, right from a lemon, which tastes brighter than purchased lemon juice.
  • Cook the pasta al dente. Bring water to a rolling boil and boil pasta for the lowest time recommended. The pasta will finish cooking in the sauce in the last step.
