Chicken Piccata Pasta in a White Wine Sauce

My friend recently asked for a romantic pasta dish for two, and this is what I recommended. Chicken piccata pasta in a white wine sauce. I told her it would bring her and her soon-to-be husband together in the kitchen. Since my friend and her groom is just getting acquainted with making full dinners from scratch, and they want to keep cooking fun, I wanted to keep this recipe simple so it would be a success.
So this recipe is my take on an easy chicken piccata pasta. There is no flour. No broth. Just thinly pounded chicken tenders, Chardonnay, zesty lemon, perfectly roasted tomatoes and a pop of flavor from capers and fragrant fresh herbs. It is a romantic dinner for two that can bring couples together in the kitchen. I told her, down the line she can double the recipe to feed a family of four or to serve as an easy pasta dinner for guests. Let’s get cooking!

Ingredients for chicken piccata pasta
Long, thick pasta noodles, like fettuccini or pappardelle shapes, are great pasta choices for chicken piccata. Smaller, circular shapes like rigatoni and ziti also work well for chicken piccata pasta.
Chicken breast tenders cut in 1-2 inch wide strips are best for this chicken piccata pasta. Using these smaller pieces of chicken will help the dish cook quickly and absorb more flavor than full pieces of chicken breast.
Roasted cherry tomatoes in a garlic shallot butter sauce add a beautiful color and sweetness to this dish.
And the star of this dish, the white wine sauce, is so easy to whip together! It’s made with a dry white wine – preferably Chardonnay – comes together with fresh squeezed lemon juice, butter, salty capers and fresh chopped parsley. For the final touch, fresh grated parmesan is a must.
Things you don’t need for this recipe? You don’t need flour or broth, which are sometimes found in other chicken piccata recipes. This version has you covered on flavor without those ingredients.

How to make chicken piccata pasta in a white wine sauce – step by step
First, bring water to a boil in a large pot on the stove.
While preparing other components of this recipe, cook pasta to al dente. Make sure not to overcook pasta, because it will cook a little more when added to the sauce in the final step. When the pasta is done, drain it, then coat it with a drizzle of olive oil. Set it aside.
Pound chicken breast tenders between two pieces of plastic wrap until they are 1/4 inch thick. Season the chicken with salt and pepper.
Heat a large pan with deep sides to medium-high heat. Add olive oil, and once the oil is hot (it will appear shiny and sizzle when chicken is added), add the chicken.
Brown each side of the chicken tenders until golden brown – about 3-4 minutes on each side. Remove chicken from pan.
In the same pan on medium heat, add cherry tomatoes, olive oil, and a sprinkle of salt and pepper.
Stir regularly for about 3 minutes, until cherry tomatoes begin to soften and wrinkle. Remove tomatoes from pan and set aside.
Use the same pan on medium heat to melt the butter with the garlic and shallots. Stir regularly for 1 minute, making sure the garlic does not burn. Add white wine and reduce liquid in half by whisking the garlic and shallots in the sauce for 1 minute. Add lemon juice and whisk for 1 minute.
Turn pan down to low heat, add butter, capers, parsley and the al dente pasta to the white wine sauce.
Add chicken to the sauce and let it simmer on medium-low for 2 minutes. Sprinkle with fresh grated parmesan, parsley or basil.

Ingredients
- 1 pound pasta try fetuccini or pappardelle
Chicken
- 2 tbsp olive oil
- 2 lb chicken breast tenders 1-2 inch wide strips
- 1/4 tsp salt
- 1/4 tsp pepper
Roasted tomatoes
- 1/2 cup cherry tomatoes
- 1 tbsp olive oil
White wine sauce
- 4 cloves garlic diced
- 2 shallots diced
- salt
- pepper
- 1 1/2 cup white wine dry (try chardonnay)
- 4 tbsp lemon juice fresh (about one lemon)
- 3 tbsp butter
- 3 tbsp capers drained
- 1/2 cup parsley chopped
- 1/2 cup parmesan grated
- basil or parsley for garnish (optional)
Instructions
