    Yummy!! You’ve landed at one of the best summer galette recipes! My take on a mixed berry galette with cherries and blueberries is a wonderful way to end a long summer day. Baking a “pie” doesn’t get much easier than this this! In addition to fresh berries, this recipe uses just one sheet of pie crust dough- which you can purchase pre-made to make this treat in a hurry. Once you “go galette” you might never go back to traditional pies! Wondering what all the fuss is about? Let’s get baking!

    Why this mixed berry galette recipe is a winner

    My husband swears he married a baker when I whip together this easy berry galette. It’s fantastic straight out of the oven, served warm with a scoop of cold vanilla ice cream.

    Ingredients for Mixed Berry Galette (Cherries, Blueberries, and Pie Crust Dough

    Ingredients to make a mixed berry galette

    This recipe for mixed berry galette uses just one 9” round pie crust. Don’t bother making it from scratch if you’re short on time. Using store bought pie crust for this easy berry galette is a great idea. In fact, I recommend stocking up on extra frozen pie crusts for when a galette craving hits! (galette cravings happen all the time in my house)

    This recipe calls for both cherries and blueberries. But you can use any berries in any ratio you’d like. You’ll need four cups of berries total.

    In addition to fresh berries and pie crust, there are a handful of pantry staple ingredients that go in this easy berry galette recipe. You’ll need brown sugar, cornstarch, lemon marmalade (substitute lemon juice), vanilla extract, salt, cinnamon and butter.

    How to make mixed berry galette – step by step

    Preheat oven to 375 degrees. Line a rimmed baking sheet with greased parchment paper. Roll the 9” pie crust in all directions until it is ~12” diameter. Place the dough parchment paper lined baking sheet, and store in the fridge while preparing the mixed berry galette filling.

    In a large mixing bowl, add cherries, blueberries, brown sugar, cornstarch, lemon marmalade, vanilla extract, salt and cinnamon. Stir to combine. Then use a potato masher (or use the bottom of a glass) to smash berries and pantry ingredients together about 10 times. Stir with a spoon until all white from baking ingredients disappears and the mixture is combined.

    Add mixed berry galette filling to the pie crust, leaving a 2” space around the perimeter of the pastry. Gently fold pie crust edges in 4” segments over the top of the cherry and blueberry galette filling. The edges of the pleats will overlap. Brush pie crust melted butter.

    Bake at 375 degrees for 45-60 minutes, until crust is golden brown. If crust appears too light at 55 minutes, add a little more melted butter or butter spray on the edges.

    Cool for 15 minutes before slicing.

    For ultimate satisfaction, serve with vanilla ice cream.

    • Have any galette serving suggestions? Absolutely! Top this mixed berry galette with a handful of fresh berries. This galette is superb served at room temperature or warm with a scoop of vanilla ice cream.
    • What type of ice cream scoop do you recommend? I just purchased this ice cream scoop. I love the size and it’s easy to use. I love it! Then again, any tool capable of getting ice cream to my face fast and easy is going to be a winner in my house!
    • Are there any substitutes for lemon marmalade? Yes. I like lemon marmalade because it has a lot of flavor and some pieces of lemon, but fresh lemon juice is a great alternative.
    • Any tips on how to get pie crust to turn brown? Brown the pie crust bottom and edges by putting some butter or butter cooking spray beneath the pie crust before adding the berries to the dough. Then brush the outside dough edges with melted butter. If the pie crust dough is not golden brown at the 55 minute mark, add a little more butter.

    Ingredients

    • 1 9" round pie crust dough chilled

    • ⅓ cup brown sugar + 1 tbsp divided

    • ½ tbsp cinnamon
    • 1 tbsp butter melted
