I’m a long time fan of sweet potato fries and candied sweet potatoes. But those sweet potato side dishes lack one major tasty ingredient: blue cheese.

This savory roasted sweet potato with blue cheese recipe hits all the right notes.

Peel two sweet potatoes and slice them into one inch discs.

Arrange sweet potato discs on a rimmed baking sheet lined with parchment paper.

In a bowl, mix together the butter, salt, and paprika. Drizzle the mixture over the sweet potatoes on the baking sheet.

First, they bake for 25 minutes on one side. Then finish the roasted sweet potato rounds for 20 minutes on the other side.

Ingredients

  • 2 sweet potatoes
  • 3 tbsp unsalted butter melted
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • 2 tbsp cilantro
  • 4 tbsp blue cheese optional

Instructions

  1. Preheat oven to 425 degrees. Peel the sweet potatoes and slice them into one inch discs.

  2. Arrange sweet potatoes on a rimmed baking sheet lined with parchment paper. In a bowl, mix together the butter, salt, and paprika and drizzle over sweet potatoes.

  3. Bake the sweet potatoes for 20 minutes. Flip the sweet potatoes and bake for another ~25 minutes, until the outsides are crispy.

  4. Serve with a sprinkle of cilantro and bleu cheese.
