Hello, hello! I wanted to pop in here and share something fun I was a part of today. I had a couple recipes featured on local news this morning.
Portland’s KGW News put a search out for Summer recipe favorites and I was chosen to share some of my favorite make-ahead salads on air.
The first clip from the Mexican Veggie Salad Dip recipe featured on Portland news
Within a week of sharing my ideas, Portland anchor Drew Carney was in my kitchen filming a segment on how to make my infamous Mexican Veggie Salad. All my friends and over 11,000 YouTube viewers know all about it.
It was time to bring this salad to the masses!
I’m so happy to be sharing the love for this salad! It’s one of our favs at home.
And the second recipe clip that aired live on local news
For the second segment, I woke up at the crack of dawn (how do these people get to work at 3:45am?!) to share the featured salad recipes live in the studio with the KGW anchors. I laid out the salads on a table on wheels that was rolled in to the studio where our segment was filmed.

Well, that was so much fun! Now that my lil’ babe is about 6 months old, I’m hoping to get out and do exciting things more often. Like my wild before-baby days. (oh they were *so wild* – ha!)
Anyways, what an honor to make these recipes for people in real life! I share them with readers here at Sip Bite Go, and cook for friends with Chef Hubs, but this was quite a bit different.
These are two great Summer recipes. And, actually, I make them a couple times a month. They’re easy dishes to bring to potlucks, tasty super bowl party recipes, and great dishes to keep in the fridge for when hunger strikes.

Today’s “Drew and You: Summer favorite recipes” featured these two favorite lettuce-free salads…
This make-ahead Mexican salad is made with a ton of veggies, beans, corn, cilantro, a squeeze of lime, and ranch dressing.
And my best caprese salad is made with mozzarella balls, fresh basil, a tasty garlicy vinaigrette, red onion, and tomatoes.
I was thrilled to already get an email from someone saying they would be making the recipes for July 4th!
Well, I’m pretty freakin tired after waking up at 4am! Time for a snooze…
