Can you smoke nachos on a baking sheet?
Yes, I find smoked nachos are gobbled up quickly when we’re smoking recipes for a crowd. If I’m serving 6 people or less, I’ll make this exact recipe in a large cast iron skillet. If I’m serving over 6 people, I use a large rimmed baking tray.
Should you layer smoked nachos?
I usually make two layers. You don’t have to layer nachos when cooking them in the smoker. Just know that it might take a few less minutes until the cheese melts. If the cheese starts to bubble, it’s time to take them out.

Here’s what you need to make smokey nachos with a pellet grill.
Basic recipe ingredients for smoking nachos
- Tortilla chips
- Smoked brisket or any cooked meat you’d like
- Shredded cheddar cheese (or another shredded cheese you like)
- Marinated red pepper (the kind that comes in a jar)
- Onion
- Black beans
- BBQ sauce
Topping ideas for serving smoker nachos
- Avocado
- Cilantro
- Lime
- Creamy jalapeño ranch sauce or a store bought avocado sauce
- Pickled jalapeños
- Sour cream
- Salsa or diced tomatoes
How to smoke nachos on Traeger pellet grill
Now I’ll walk you through it…
- Preheat Traeger or whatever pellet grill you’re using to 375 degrees F.
- Assemble smoked nachos. This is best done in layers in a cast iron skillet or a rimmed sheet pan. I suggest adding half the tortilla chips to a cast iron pan and topping them with half the smoked nacho topping of your choice. Then repeating this step again, with the remaining tortilla chips, and then the remaining nacho toppings. This way all of the chips get a delicious bite of all the ingredients. In my house, every chip has to touch a topping – it’s a rule!
- Smoke nachos. Add prepared smoked nacho platter to the smoker, on the Traeger grill grates. Close the Traeger and smoke nachos at 375 degrees F. (You can smoke them at 350 degrees F, but it doesn’t matter a ton and they’ll be done faster at 375). Your smoked nachos will be done in about 15-20 minutes tops. Smoked brisket nachos are done when the cheese has completely melted.
- Top Traeger nachos with condiments and ingredients of your choice. Serve and enjoy.

Meat thermometer recommendations
Every home chef needs a reliable meat thermometer to cook food perfectly.

How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever before cooking them.
While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!

Basic ingredients for nachos in the smoker
- 15 oz tortilla chips
- 2 cups brisket cooked smoked brisket, diced
- 2 cups cheddar cheese freshly shredded
- ¼ cup red pepper marinated in a jar, diced

- 1 avocado smashed
