Ingredients
- 4 ears sweet corn, husked
- ½ cup pesto
I love to load up the smoker with mains and sides to get the most out of my pellets and time! Here I’m smoking french toast with corn on the cob for a brunch BBQ menu.
How to smoke corn with pesto
1. Prepare Corn
Line up the husked corn on a rimmed baking sheet.
2. Apply Pesto
Generously spread the fresh pesto all over each ear of corn, ensuring they are well-coated.
3. Smoke Corn
Preheat your Traeger pellet grill to 350°F. Place the pesto-covered corn directly on the grill grates and smoke for about 30 minutes, or until the corn is tender when pierced with a fork.
4. Serve and Enjoy
Remove the corn from the grill and serve immediately. Enjoy the smoky, herb-infused flavors of this delicious summer side dish!

Meat thermometer recommendations
Every home chef needs a reliable meat thermometer to cook food perfectly.

How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever before cooking them.
While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
