If you love flavorful meat with little excess fat, then Griddled sirloin steak is the way to go. Cooking on the griddle will give your sirloin steak a tremendous sear with a juicy warm red center that will hit your tastebuds perfectly. Grab a sirloin steak, fire up the griddle, and I’ll teach you how it’s done. Let’s go.
Preheat Traeger Flatrock or Blackstone or whatever griddle that you’re using to medium high heat.
Prep sirloin steak for griddling. Pat sirloin steak dry with a paper towel and rub ½ tbsp olive oil over the steak so the seasoning can adhere to the steak.
Season sirloin steak on all sides with the BBQ dry rub seasoning.
Add the remaining olive oil to the hot preheated griddle.
Place the seasoned sirloin steak directly onto the griddle. TIP - be sure to lay the steak away from you so the hot oil doesn’t splash back at you.
Cook sirloin steak for about 2 - 3 minutes on one side.
Flip sirloin steak and cook for about another 2 - 3 minutes.
Finish griddled sirloin steak by griddling the edges so you have a sear on all sides of the steak. (~30 seconds per edge)
Remove griddled sirloin steak when it reaches 125 degrees F as measured with an internal read thermometer for a medium-rare finish. TIP - If you want a medium finish, remove the steak once it reaches 135 degrees F internally. The internal temp will rise during the next step.
Rest. Allow your griddled sirloin steak to rest for at least 10 minutes prior to slicing. This resting period will let the internal temperature rise while the juices settle back into the steak.
