½appleskin removed and grated, red or green
3tbspbutter
¼cupmaple syrup

Instructions
Prepare pancake batter according to store bought package instructions (for about 8-10 pancakes) in a large mixing bowl. You don’t need to add extra anything to accommodate the additional fruit in pancakes.
Add fresh blueberries to pancake batter and mix.
Add grated apples to pancake batter. Mix.
Heat a large skillet or pan or griddle to medium heat. Add about 1 tbsp butter to the skillet and once it melts, add apple pancake batter to the skillet, in whatever sizes you’d like. Flip pancakes once the top (wet batter) starts to bubble, and the bottom turns golden brown. Remove when cooked through and both sides are browned.
Keep making pancakes until the batter is completely cooked, adding some butter to the pans in between so they cook in tasty butter and pick up color. Serve with maple syrup and fresh strawberries or other fruit as you’d like. Blueberries especially will be very hot, so use caution before eating them.
