Remove the St. Louis ribs from the packaging and pat each side dry with a paper towel.
Drizzle the olive oil over each side of the ribs and rub in as your binder for the seasoning.
Evenly coat the ribs with the dry rub seasoning and let the ribs sweat (sit out) for 20 minutes on a foiled rimmed baking sheet.
Place the baking sheet into the oven and cook the St. Louis ribs for 90 minutes uncovered with the meat side facing up.
Combine the BBQ sauce and honey together in a small bowl, whisk, and set aside.
After 90 minutes, remove the ribs from the oven and brush with the honey BBQ sauce. The ribs will be cooked at this time with an internal temperature ~200 degrees F for fall of the bone ribs.
Place the ribs back into the oven and broil for 3-4 minutes on high so the honey BBQ sauce can set onto the ribs.
