Preheat oven to 425 degrees F and line a large baking sheet with parchment paper.
Add in the ground pork sausage and 1 egg to a large bowl and combine.
In a small bowl, mix together the panko bread crumbs, Italian seasonings, garlic salt, onion powder, and pepper. Add to the ground pork mixture and combine thoroughly. Divide into 6 equal portions and set aside.
Flour a large work surface and do the following to each of the two pieces of puff pastry: dust dough with flour then use a rolling pin to roll out the dough so it is a bit larger, then cut into 3 rectangles.
Roll each portion of sausage into a log shape down the center of each puff pastry rectangle, so there is about 1 inch on each side of pastry dough. Seal the pastry dough and roll so the seal is on the bottom. Pierce the top of each log down the center with a fork.
Cut each log in 2” sections and gently reshape if needed so they are round.
Add pork sausage rolls to the baking sheet, with room around them to expand.
In a bowl, whisk together egg whites with water. Brush on top of sausage rolls and sprinkle with everything bagel seasoning.
Bake for about 20 minutes, or until sausage is thoroughly cooked, and puff pastry is fluffy and golden brown.
