Instructions
Prep corn on the cob. Start by removing the corn from the husk or defrost corn if using frozen.
Simmer corn on the cob in a large pot of water until halfway cooked. 5 - 10 minutes
Drain corn from water.
Preheat Blackstone griddle to medium low.
Add butter to the hot Blackstone grill and spread it around the surface where you’ll add the corn.
Add corn to the buttered Blackstone grill.
Place corn on the cob directly onto the Blackstone griddle and cook for 2 - 3 minutes per side (~10 minutes total) flipping with a pair of tongs. Covering corn with a lid pot while it is cooking will help steam the top kernels that float above the water.
Remove griddled corn on the cob. When the corn is perfectly seared and seasoned on all sides, take them off of the griddle to cool.
Finish griddled corn on the cob with butter, fresh chopped cilantro, and a sprinkle of cotija cheese if desired.
