Preheat the oven to 375 degrees F and season top sirloin steak with salt and pepper.
Heat a large cast iron skillet to medium high heat. Add olive oil. When olive oil begins to smoke, add seasoned top sirloin steak. Sear for 3 minutes.
Flip steak and sear for 1 minute. Turn off the burner and quickly add the butter, garlic, and rosemary on top of the steak (it will melt in the oven and bring delicious flavor to the top sirloin).
Transfer top sirloin steak to the oven to cook at 375 degrees F for about 5-7 minutes, or until a meat thermometer measures an internal temperature of 135 degrees F for rare steak or closer to 140 or 145 degrees F for medium, or to the temperature you desire.I like using a thermometer that has a probe that goes inside the steak and a cord connecting to a reader outside of the oven so I know exactly what temperature the steak is at all times.
