Instructions
Preheat Traeger or whatever pellet grill you’re using to 375 degrees F.
Assemble smoked nachos. This is best done in layers in a cast iron skillet or a rimmed sheet pan. I suggest adding half the tortilla chips to a cast iron pan and topping them with half the smoked nacho topping of your choice. Then repeating this step again, with the remaining tortilla chips, and then the remaining nacho toppings. This way all of the chips get a delicious bite of all the ingredients. In my house, every chip has to touch a topping – it’s a rule!
Smoke nachos. Add prepared smoked nacho platter to the smoker, on the Traeger grill grates. Close the Traeger and smoke nachos at 375 degrees F. (You can smoke them at 350 degrees F, but it doesn’t matter a ton and they’ll be done faster at 375). Your smoked nachos will be done in about 15-20 minutes tops. Smoked brisket nachos are done when the cheese has completely melted.
