Instructions
Set up a crock pot machine / slow cooker and preheat it to low, medium, or high based on your preferred for cooking time. The mashed sweet potatoes in the Sip Bite Go demonstration cooked on low for 5-6 hours.NOTE ON THE CROCK POT SIZE: I suggest you use a smaller 6 qt crockpot if you have one. Why? I like when the volume of the food will easily “fill up” to at least the middle of the slow cooker machine, or even better, the top. I find that a really large crock pot can throw off slow cooker recipe cook times if there aren’t many ingredients in it. If you’re using a large one, just check it regularly.
Add all mashed potato ingredients to the crock pot, but do not add chicken broth at this time. Cover and cook, stirring 1-2 times while slow cooking.
Once sweet potatoes are very soft and easy to pierce with a fork, transfer to a mixing bowl if desired and use an immersion blender to puree sweet potatoes. (I sometimes puree sweet potatoes in the crock pot, but you have to be careful not to press down too hard and ruin the enamel if you do it in there). If your mashed sweet potatoes are thicker than you’d like, blend in chicken broth, 1 tbsp at a time. NO IMMERSION BLENDER? Use a potato masher or back of a fork to mash them up. They’ll be a little chunkier, but still tasty!
Garnish mashed crock pot sweet potatoes as desired with suggestions such as a little olive oil, sour cream pepitas, fresh cilantro, and/or maple syrup.
