1cupchicken breastscooked, diced (about 1-2 pieces of chicken)

8corn tortillasthe soft small ones, or use crunchy taco shells
1cupMexican shredded cheese
¼cupred pepperdiced small
¼cuponiondiced small
1tbspcilantrofresh chopped
¼cupbbq sauce
½mediumlimewedges
1mediumavocadomashed (for serving)
½cupbarbecue saucefor serving
Instructions
Preheat the oven to 400 degrees F. Brush a large parchment paper lined, rimmed baking sheet with olive oil.
Add corn tortillas to the baking sheet.
Add equal amounts of taco fillings to one half side of each tortilla: diced chicken breast, cheese, diced red pepper, diced onion, and a little cilantro. Drizzle each taco with bbq sauce. Fold over all the tacos in half - secure with 2 toothpicks if needed.
Bake in the oven for 8-12 minutes or until the cheese has melted and taco shells are lightly browned and crispy.
Serve with extra bbq sauce, mashed avocado and (optional) the jalapeño ranch dressing from Sip Bite Go, or sour cream.
