5 ears cornpeel back the husks and discard them - aka shucked corn
¼ cup butter melted
1 tbsp cilantrofresh chopped
¼tsp garlic powder
½ tsp salt
⅛ tsp pepper
2 tbsp cotija cheese
Instructions
Preheat smoker to 225 degrees F.
In a small bowl, mix together butter with fresh cilantro, garlic powder, salt and pepper. Brush half of the butter mixture all over corn.
Once grill is heated to 225°F, add butter seasoned corn on the cob directly on the smoker grates. Close the lid and smoke corn on the cob for 25 minutes.
Flip corn, brush the remaining butter seasoning on top, and smoke for an additional 20 minutes or until corn is completely cooked and easy to pierce with a fork. The total cook time for smoked corn is about 45 minutes.
Remove smoked corn from the pellet grill, top with cotija cheese, let it cool until it’s safe to eat, and enjoy.
