Blueberry Summer Salad With Creamy Balsamic Burrata Recipe | Sip Bite Go
This 5 minute summer blueberry salad is a delicious appetizer or side dish for a barbecue party. Or whip it up for a quick weeknight meal or easy summer salad lunch. Let’s make it...
Make salad dressing for blueberry salad. Add all blueberry salad dressing ingredients to a large bowl. Whisk together until combined, about 15-20 seconds. Alternatively, add all salad dressing ingredients together in a mason jar, close the lid and shake vigorously for about 15-20 seconds until combined. Set aside.
Chop and clean lettuce leaves. Chop off 1-2” base of lettuce and discard. Chop the rest of the lettuce to large bite-sized pieces (slice horizontally and vertically). Wash, ideally in a salad spinner, and dry. Add clean chopped lettuce to the large bowl with dressing and toss to combine.
Assemble blueberry salad. Add dressing coated lettuce to a large plate. Add blueberries and tomatoes on top. Then add burrata cheese to the middle of the dish. Sprinkle the blueberry summer salad with salt and pepper to taste, especially over the burrata cheese ball.
Finish and serve salad with a simple balsamic dressing. Drizzle olive oil and balsamic glaze on the salad. I like to drizzle a lot of balsamic glaze over the creamy burrata cheese ball. Serve and enjoy.
