Add all the dressing ingredients to a ball jar, close the lid and shake for 20-39 seconds to mix. Alternatively, whisk all dressing ingredients together in a bowl until well combined.
Taste the dressing to see how you like it by dipping a fork in the jar to pick up just a little bit, or by dipping a carrot or cucumber into the dressing. If the dressing tastes a little “flat” and you only taste the olive oil, add a pinch of salt and drizzle a little more vinegar in it. If the dressing is a bit too sour and vinegar-tasting, add a drizzle of olive oil in it, shake it up again, and have a taste.
Pour dressing over salad immediately, or leave it at room temperature if serving the same day. Shake it again before serving.
