Baked Barramundi Toasts with Red Pepper and Corn Salsa Recipe (Sip Bite Go)
This recipe for baked barramundi toasts with red pepper and corn salsa has quickly become one of my favorite white fish appetizers using baguettes. With the growing popularity of barramundi fish recipes available, I wanted to create a pretty, but simple, make-ahead fish hors d’oeuvres recipe. This app starts with a garlic crostini toast, then a layer of ridiculously-easy red pepper and corn salsa, and finally, the star of the show: a bite of lemon herb butter Australis Barramundi. Prepare red pepper, onion and corn salsa. Over medium heat, add diced red pepper and onion to a large pan. Add oil, salt and pepper. Stir regularly for 6-8 minutes, until onions soften and begin to become transparent. Add corn and butter to the salsa. Stir regularly for 3-5 minutes until corn is warm.
Make garlic toasts. Preheat oven to 425 degrees. Arrange baguette slices on a pan lined with parchment paper. Mix together garlic, salt, pepper and olive oil. Brush baguette slices with garlic mixture. Bake for 5 minutes at 425 until toasts are lightly golden brown.
Cook barramundi as instructed on package... From frozen, bake lemon herb butter barramundi at 425 degrees for 22 minutes on a parchment linen pan in the oven.
Assemble barramundi toasts. First, top garlic toasts with a layer of pepper, corn, and onion salsa. Cut each fillet of barramundi into four pieces (one package of three Australis Barramundi fish creates twelve fish toast appetizers). Add barramundi to toasts, drizzle with balsamic, and top with basil.
