Devein jumbo shrimp before grilling. To do this, remove a shrimp from the bag. Peel shrimp over a large bowl (using gloves is a great idea). We leave the tail on the shrimp so it’s easy to hold when serving. Set peeled shrimp on a plate or another surface that’s easy to clean. Next, use a paring knife to cut a line down the length of the shrimp, and to remove the vein. Toss shrimp in a mixing bowl.
Season shrimp. Add all the seasonings to the bowl of deveined shrimp (garlic, curly parsley, salt, pepper, olive oil, lemon juice). Toss to combine the grilled shrimp marinade. Only marinate in the fridge for up to 30 minutes, so shrimp doesn’t get mushy.
OPTIONAL - Add shrimp to kebab sticks to make flipping them on the grill easier.
Preheat gas grill to high (about 500 degrees F). We like to rub a little olive oil on the grill grates carefully without catching on fire, before grilling the shrimp. So it doesn’t stick.
Grill jumbo shrimp on high heat for 90 seconds to about 2 minutes, with the grill lid closed over direct heat (right above flame).
Flip shrimp and grill for 1-2 minutes more, or until they curl up, turn orange and are done to an internal temperature of 120 degrees F. Enjoy.
